Thank you. I learned something. Double grinding the meat will make a more tender burger that sticks together when shaping. Grinding it just before cooking will make it tastier. Removing the blade and cleaning it off between grinds will improve the quality and thoroughness of the grind. Thanks!

I just did fresh-ground hot Italian sausage, yesterday, from a pork shoulder. 50% cheaper than store-bought sausage and the texture and flavor was unreal!

Doing the bacon bits is so great, on burgers, especially when they're so juicy and falling-apart, like these: you don't want to fight your bacon, when your burger is being so agreeable. Check the video description for a link to the grinder!

Why do you do two grinds versus one, three, or some other number?

When muscle fibers are split, they bleed out many things: one of those is a natural glue-like substance. If you only grind once, you won't get quite enough of it to keep the meat stuck together, plus the meat pieces are bigger. The more you grind, the more stuck-together the meat will be, and the smaller the pieces of meat will be, so less it will fall apart in your mouth after you bite into it - you'll chew and chew and it'll just be a meatglueball in your mouth. I find that two grinds is perfect, but if you wanted an even-more-loose burger, you could just grind once; store-bought rubber-hamburger can see as many as five or six grinds, to make it like that.
