Oh wow that comment is so.... I don't even have words for it, when a mom has to go to work we look for someway to have our baby taken care when we are not around is the same with her and the time in the kitchen is not uninterrupted 😡 besides she films mixed content in one day, then makes a few videos out of that. It's obvious they are the one raising the baby, she is not 24/7 with a camera going about all the details about her life. Wish I was a work from home mom

Becky, want to share what I do for extra flavor infusion, when cooking beans. I add a whole onion, 3-4 bay leaves, 3-4 garlic cloves to a pot of pinto beans . Tremendous flavor!

Three years ago, I grew the dragon tongue bean you spoke of. It grew up an arch in the pathway of my garden. Only had two plants germinated. I had started 4. I later found out that 50% germination is normal. I canned about 150 pints, I gave some away as gifts. I live in Texas, so we LOVE Tex-Mex. I still have enough I won’t need to can till next year. The garden plan I have for 2024 is for only one plant. I kept the soil moist and added compost once a month. The vine is quite sturdy in strong winds and the bees really loved the flowers.

For those who do not have the equipment for pressure canning (like me!) or are leary of canning dry beans, another time saver is to soak them overnight, par boil them the next day and pack them in freezer bags for freezer storage. When you take them out you are way ahead time wise and can go straight to cooking. You can do a few meals worth without sacrificing too much freezer space. I do this with dry beans and dry chic peas..a real time saver.

​@@patriciajohnson-platt4779 That depends on if you vacuum seal. Vacuum sealed about a year. Regular freezer bag about 4 months. I've used this method for years.

@@wendyslaby3373 me too. I don't really know the max time they will be good, but I know I have had them in the freezer for up to 3 or 4 months, I've always used them up before that. I never vacuum packed them..just small freezer bags.

Yesterday, I started researching mason jars for dried food storage. I found the video of you and your mother in law canning. I have now watched several videos and just ordered everything I need for canning. I look forward to canning! I appreciate the recipes you share as well. This is a very random question given the content of your channel but I've been wondering for years now... do you get your nails done or do them yourself? You're so productive and busy in the kitchen and garden, yet they're always FLAWLESS. I love when she wears the lighter nail. And I speak from experience, having gel nails have saved me from some nasty cuts. I honestly might have cut a fingertip if not for my nails. (Granted, your real nails suffer greatly from the gel nail. I haven’t had them for a few years now. And the cuts I’ve gotten, I do think “that wouldn’t have happened if I had my nails done.) Short story long, I think of this when Becky chops food. lol.

What efficiency! Such a rewarding hard working endeavour! I always look at my preserves thinking " There's gold in them there jars"! A couple hints. 1. Perhaps use your spray feature on your tap when rinsing products? It goes much faster. 2. When using onions/veggies/ or whole spice ingredients as enhancer: Use a gauze bag or tie the ingredients in a section of gauze and toss in pot. Easy to fish out the gauze bag, than deal with atray bits of onion etc. We can buy the pre sewn bags called " poultry stuffing bags".I use them in many ways, as well as cooking stuffing outside a bird. Anyway, love your channel!

Hi Becky!! Whenever I cook beans I like to use my family’s recipe that’s been in the family for 4 generations now. For 2 pounds of beans I normally use red beans, we add 3-4 garlic cloves 1 small onion cut into 4 and 2 tablespoons of a good quality salt. Im from Central America, we eat beans with everything lol When I refry them I sauté half an onion in 2 tablespoons of olive oil and add that browned onion to the blender with some of the oil blend all of that together then cook them in that some pan for 5-10 minutes, I promise you will never have better tasting refried beans then those!! I like to add a little bit of Goya seasoning too but I’m sure you have better tasting home made bouillons. Delicious my favorite beans ever! I do the same for black beans too. Let me know if you try them.

Sure! For 2 cups of refried beans I use 2 to 3 tablespoons of olive oil and I usually throw everything including the browned onion in the blender, blend to your liking and then throw everything in the same skillet or pot I like to add about half a teaspoon of Goya adobo and then just cook till they boil, they are delicious and so flavorful. I use

Once a month or three, I count up the jars of beans I've used that month and do a canner load to replace them. You are so right about the convenience of having home canned quality products on the shelf. Be sure to savor all your hard work when you create all those dishes in the future.

Wait. There’s an IP method? 😮. I am still steeping my vanilla beans (lol) for the second year. Even converted my mom to “homemade” vanilla extract especially since we just looked at extract prices at the grocery store. I needed peppermint for the holidays. I did not think that through 😂. Next year I think I’ll be making many more extracts. All that being said, where did you find the recipe for the IP. I’ve got beans, not too late for gifts. 🙏

The dragon tounge beans are so good. once you eat them you will never plant anything else. They don't come apart when you cook them. They are kinda creamy. You will love them.

Becky, If collect the soaking water from the beans - it's really the BEST fertilizer for your plants ... ! (The same with the soaking water from rice or other grains.)

Hi Becky, love your canning videos! I don't can, but my family does a black bean "stew". In a pot (or slow cooker) you add the raw beans, a meat with bone (beef or pork are great), onion/garlic (you can leave whole), salt, and a bay leaf. The meat will fall off the bone, the beans are beautifully infused and the broth is incredivly delicious! We serve with white rice side. 'Crema', lime, and cilantro are good topping options too

Congratulations on the subscriber milestone. This video was the most professional yet. I have all of the ingredients to can dried beans but have hesitated to use the dried cold pack method touted by other homesteaders. I am impressed with the appearance of your finished beans and will can mine the same way. Thank you for the step by step instruction.

I got myself the presto electric pressure canner last year 🎄. I love it so much that I want a second one! My family will be gifted quarts of taco soup, chicken stock & who knows what else 🥰 🫙

I’m so excited to get a pressure canner and start making things like this for myself! I’m in the UK so they are quite expensive, and it’s hard to get good quality canning jars at a reasonable price so I’ve been slowly stocking up on those first, I’m saving up for one in 2024 😊

Been doing some water bath canning for just over a year which I love but want some more options that only a pressure canner can give, like beans and soups as I don’t have enough freezer space to bulk prep lots of freezer meals but I can find space for jars. Good luck with your bonus, hoping to get one in April too 🙏

I have seen people from Europe can in jars left from store bought sauces and jams. They probably only do water bath canning in them, but they would be a free option for jars and lids.

The hardest thing for me in my older years (I’ll soon be 70), is judging the amount I preserve for the upcoming year. I’ve always loved canning and preserving, more so now that I have an electric pressure cooker. But I need to have better control over the quantities of food I preserve. I gift a lot. But the love of canning and preserving especially in season makes me buy more and preserve more than I need. The struggle is real. Much love to you and your little family ❤️

I tell people I can because future me is lazy.... I work hard then make very quick meals as a result, keeping in mind health and food allergies.

Dragon Tongue beans are our favorite beans!!! But, in my experience, they are bush like. I have never dried them though. We eat them fresh and like them better than green beans. Plus, they can very well. DT beans are very very prolific and the more you pick the more you will have. This bean will always be in my garden!

We grew them for the first time this year and my kids absolutely loved them. I think I got to try only 1 or 2 because while I was picking other varieties they were eating all the dragon tongue 😂

Becky, you can make deliciuous Black Bean Brownies, instead of flour you use beans and it is super deliciuos. Brownie cookies as well..black beans are a super alternative to flour, for gluten free diet or just a way to use black beans in other ways than soups, stew or mexican food. ❤

Congratulations on 500k subscribers! I got a great tip years ago to add a few cloves of garlic to my pot of beans and it makes them plump and extremely flavorful. For the volume you did I would do a whole head of garlic per pot.

Hi Becky. I have been canning dried beans too! You were talking about a good bean to grow and I have loved canning a purple green bean. Lol. They are dark purple when they are raw. Easier to see when picking and they turn green when you cook them. Also a great green bean to grow is rattlesnake green beans. Very prolific and have a wonderful taste.

I live for my electric canners. I’m just not good at babysitting the canners, lol. I’m usually multitasking since I work a lot but food preservation is a priority as well as not wasting food. Between the two canners and my two IP’s, I can get a lot done in a short amount of time which is amazing. Congratulations on 500k! 🎉🎉🎉

On the instant pot, the tab on the lid fits into the hole on the handle. So in effect the handle holds the lid whilst sautéing or serving.
