Becky, just remember you’re having fun with the gingerbread house, perfection isn’t the main goal. Now you have your efforts from this year to build upon for making improvements in future years. I admire your grit in challenging yourself taking on the house. For me, I think you did an incredibly fine job!

This reminds me of 100 years ago when I was in high-school. I don't remember if it was an art class or home economics, but I labored for days over a gingerbread house. Proudly gave it to a relative for Christmas. She had it as a centerpiece on her dining room table.....for about 24 hours......the dog noticed it, got up onto the table and - ate the whole thing. 😂😂😂😂

Well the dog had an artistic eye, lol. I took home ec all through high school and wished that they'd still taught it when my kids went to school. Probably the most helpful class I had for day to day living.

Girl, this brings back memories from my Culinary Apprenticeship. I'm a Commis Chef at a major hotel in Toronto 🇨🇦 and I wanted to go big for my final Christmas gingerbread house. Every year the apprentices create GB houses to be displayed over the breakfast buffet. My last year I made a miniature replica of the hotel. It took me 9wks to complete on top of a 40hrs+ work schedule. It had Christmas trees made of ice cream cones, construction workers as the city was doing work on the road and side walks at the time and blinks lights from the dollar store. My husband was so over it and when I woke him up at 4am to show him the finished product he said pack it up and let's go deliver it. We did, we got it there safely and on the buffet. Oh, I forgot to mention I had to build one section twice because my curious kitty knocked it over. Needless to say it was a hit, I got an A, all the chefs loved it and congratulationed me but I'll never ever ever make GB again. Like ever😜!! Merry Christmas ⛄

So lovely! My tip would be to decorate every piece flat before constructing the house. It is more comfortable to work with, just like drawing, you could try stencils too, that is easier, you did it the difficult way and turned beautiful! ❤

I did the dutch house version last weekend and instead of cutting off the windows just glued some white chocolate tablets before constructing the house. It was like a merge.of the gingerbread dutch house and Hansel&Gretel house 😂😂 the kids really enjoyed it!

I love making gingerbread houses every year! My tip would be to decorate each piece before you assemble it! Its easier to do when it's flat vs being upright!

@queenizzy01 yes you do have to be careful about where you hold it! I like to do flood icing so I let mine dry overnight to make sure it's completely set! I know everyone has their own preferences though.

Really cute gingerbread house :) In Sweden we do these every year and we usually use melted sugar when assembling the house and then icing for decorations. The melted sugar isn't very visible and it's strong and hardens fast, but of course quite hot so the children are only allowed to watch when it's being assembled and then they join in again when it's time for decorations :).

I was also going to give the melted sugar method. In Sweden we use a little different recepie on the gingerbread dough. We use syrup (sirap in Swedish), light or dark. No molasses. So the dough is lighter in colour. As it has been said already, we use melted sugar to build the gingerbread house, and when it's set ( in no time😉) we decorate with icing,candy and whatever you want and like 😁

Becky, I wish I had known you were planning to do a gingerbread house. putting a rectangular sturdy loaf cake inside to stick the walls to is the best kind of cheating. it holds the house up and you have extra dessert. I use a plain cookie dough (no molasses which makes the walls soft.) and if I want it brown I spice it up. I'm still at the beginning so I have no idea how this worked out for you...always wishing you the best of luck. Have Fun...Jim Mexico.

Isn’t he only a year old? I think this would be more frustrating than fun at that age. I used to do a gingerbread house decorating event and most of the kids younger than PreK or kindergarten were not interested in decorating (the houses were assembled for them) or tried and were upset when it was too hard with their developing motor skills

A couple hints: 1 cup of flour is 120 grams and if you liked the template for the gingerbread house, you could laminate the pages so you could reuse them.

I watch Rose Red Homestead and she did a lot of research on how much 1 cup of flour weighs. It weighs 144 grams.

I agree with the lamination. But trim it back a bit so there’s a sealed edge so a rinse and wipe won’t open it up.

@@pmbramucci1056 I'd go with America's Test Kitchen's weight. I always weigh my flour at 144 grams per cup and have had good luck. I bake a lot especially at this time of year. I've been baking for well over 40 year's. I started weighing my flour over 35 years ago.

To prevent the distortion: Cut the pieces, pull away the extra stuff, and transfer the entire parchment paper with cutouts to the tray. It might save on parchment paper, too, since you used six pieces for the prep/baking of the house pieces.

Tip: you can always cook a square piece of your scrap dough to taste when timer goes off, then cook longer if need be.

Love your videos as always, and I am so looking forward to what you whip out this holiday season! A tip for decorating the houses (not for contests): Decorate your sides before assembling and let it dry completely. It's a bummer to wait for, but I find it much easier to decorate while the lay flat.. It's just a tad more difficult to make the assembly less messy :D

I think in America it is gingerbread houses but here in England we have the traditional Yule Log. It is traditional to light a special 'Yule log' on Christmas Eve and keep it burning through the 12 nights of Christmas until Twelfth Night. Traditionally, a huge log would be selected in the forest on Christmas Eve, decorated with ribbons, and dragged back home. This was known as 'Bringing in the Yule Log'. Now we bake them so delicious. Next week I have to make 24 of them. I add a small amount of spicy rum to my ginger cookies or Cointreau either one just elevates them

Well done! For a 1st house you did a fantastic job! I’ve been gingerbreading for over 20 years and for about 5 or 6 of those years I made multiple houses each year. Oh my goodness did the mom in me come out watching this! I kept yelling tips and tricks to you😂 I about came unglued when you wiped your gingerbread with a damp paper towel! My husband came in from the other room to make sure that I was ok🤣🤣 My gingerbread house dough does not contain egg. It is almost like a gingersnap, or cracker texture, and sucks up moisture from the air even. It gets deliciously soft after the house has been sitting all assembled for a couple of days. You mentioned making brown icing, I did that on a little Valentine’s chocolate bread chalet one year. Just use cocoa powder in place of some of the powdered sugar to give it the color you want. Your piping skills will get better as you continue to play with piping bags, and decorating cookies and small cakes are a great way to do that. I found myself wanting to come play with you and share my knowledge and love of gingerbreading with you. I was thrilled to hear that you have someone who knows a lot about gingerbreading that you can create wonderful, edible memories with❤

I always make a lot of mini-gingerbread men cookies. I put demerara sugar on top. When I make the bigger cookies, I decorate them but for the small ones, the sugar is really good.

Gingerbread house most certainly can be consumed! We were a family of six, our parents and four children and our creations got a picture taken. Then we along with relatives with us during the holidays had our yummy house! 😊❤

Always sift the powder sugar after measuring, you can use straight pins to help to keep the sides together while drying. You can use dowel rods to roll out the dough to be all even and roll out on cookie sheet and cut out, no moving, just pull away the extra dough. Just a few helpful hints, you did great

Hi Becky When I use to bake these with my children we had icing of course for putting together and a second batch of icing with coconut for decorating which gave it a more snowy look, thanks to my daughter for that tip when she's about 4 or 5 as she loved coconut, I learned to decorate the walls first let dry than attached... You did an amazing job ❣️Another great video for which I shared with my son inlaw as he wants to do this with my grandson ❤

For the flour and weighing it, I have noticed that you always use one measuring cup to dig into the flour. I used to do that as well, and then I learned that it's really more proper to use another spoon to put the flour in the measuring cup you're using and then level it off. So now I keep a scoop in my flour container, so I remember to do it that way.

If you are weighing it, it doesn't matter what you use to put it into the bowl on the scale. Filling the measuring cup with a spoon and leveling it only matters if you are NOT weighing it.

I really enjoy working with royal icing and learned about consistency in the following way. Glue is used for construction, make it the thickness of spackle. If you take a dollop, the peak from your spoon shouldn't move at all. Piping consistency is for drawing, make it the consistency of toothpaste. If you make a tall peak, it should soften and curl over very slowly. 20 second icing is for semi abstract, like melting snow. If you make a dollop it will slowly melt into itself so that at 20 seconds the last signs of the dollop have disappeared into a smooth puddle. Flood consistency is like honey; thick and luxurious, and pourable. Flood will immediately disappear into itself if you create a dollop. Julia M Usher is a solid resource for icing prep.

I've done store-bought gingerbread houses for the past few years,but they're a lot smaller than they once were and I always end up buying more to ingredients to decorated anyways. Becky, I've not done the house from scratch yet. I used a kit where the cookies were made already, and you put the pieces together with icing than decorated. Your house came out really nice. So did the ginger bread men😊

I hope someone knows the answer to this, I’ve been trying to find the silicon freezer bags used for the garlic pucks and chopped onions. Have looked on Amazon but I’d really like to have the specific bags used on this site and not just some random bags. Any help?

That was fun. It reminded me of the year we made a gingerbread neighborhood. The only home made one was the school and it was the one I loved the most. Next was the graham cracker Church on a candy cane box foundation And the general store. We even made little triangle shelters for "pets". The kits we made into a train station and a town hall. It was pretty rustic looking, not professional by any stretch. But the house smelled amazing. We had 3 big tables set up for display. When ppl came over we'd offer supplies for them to make Graham cracker structures of their own to add to the display Or..they could take one home if they wanted. That was a year full of memories and we kept it up for months.. in a big dining room we weren't using.. Near a fireplace. So Becky, I'm inspired again. Thank you for showing the fun and the fumbles that go into creating a home made gingerbread house. Till next time, take care you you ❤🎄 take time to relax and enjoy it all. 🤶

I was groaning internally when I noticed that you had switched the roof and side piece. I kept saying, "Honey! No, look! the walls are too short because they aren't the walls!" Thank goodness you noticed before you got any further in the process!

Making 5 this year plus cookies. Assembling 5 and giving 4 to family&friends for them to decorate. We go crazy with candy decorations. Then it they get devoured on Christmas ❤ I have molds that you press dough in & bake.

Try using a star tip for a more finished appearance on the edges and at the ground of the house. Also, you are right that royal icing should be really stiff and will challenge your hand strength but the end result is worth it. Also place a damp towel over the top of your icing bowl to keep the humidity up and only put what you are working with into the piping bag. You can use a coupling device in the tip of the piping bag and then switch out your tips easily. Hope you find these tips useful. FYI…. I love your garlic pucks. My new favorite thing. Thanks for sharing.

It also helps to have the pieces laying down and decorate some of the sides and front BEFORE you put the house together. I’m a professional cookie decorator/baker and it gives you more control and no more dripping and messing up. You can make such nice looking designs that way. Plus, you can sprinkle sugar on your snow area and it looks super cute

Have you ever used melted sugar to assemble the gingerbread house? Because that's how we Swedes do it and it's a technique that goes through generations. It hardens quick and is soooo stable so it never breaks.

The gingerbread house and the cookies are stinking adorable becky. I wouldn't worry too much of having too much icing look like a mess because I think it's supposed to represent snow on a gingerbread house anyway and just think of it as a really bad nasty blizzard that hit that house Hahaha

When my husband and I were still dating I made a ginger bread house from scratch. It was a two storu style house yard and xmas decor galore! It was such a big project for menat the time. When friends would come by they would add a little something to it, it became a group project. I loved it amd was so proud when I finished. It was displayed in the middle of our dining table. We had roommates at the time and we went out and the dogs got left out. I got home but was locked out. As I walked towards the back I passed the dining window and saw one of the dogs going to town on it 😢 By the time I got in the house they were licking the frosting left on the tray 🤭 Its been18yrs and I haven't made another 🙃

Now you can start another tradition😂 next yr its ginger bread house with lolly windows, a door propped open, stuffed with lollies, choc royal icing for the joins and coloured royal icing for decorating with lollies in key places😂😂😂🎉🎉🎉🎉 I think the youtube channel is JuliaMUsher Cookie decorator, she has a video on royal”glue” and what you need for flood coat and outlining.

Wow cool, i didn't know that that rolling pin existed. But if you don't have that you could also use dowels. I also wanted to mention if you need a sturdier template, i like to use take out containers or the plastic from my spinach containers etc. It's free and works excellent. I seen your gingerbread house and men and cannot wait ❤❤❤

Becky, if you lay some frozen items directly from the freezer on your stone counter tiles - things that will make good contact with the tiles, like bags of hashbrowns, peas or ice cubes - for a few minutes as needed it will chill your tiles so the butter doesn’t warm up as quickly. Some people keep a marble slab to stick in the freezer and then use that to keep various doughs chilled. Those gingerbread men turned out so cute. ❤

Becky youve done so very well considering its your first attempt from scratch. As a trained pastry chef, its not easy to do. You also filmed yourself doing it. Well done!!! I cut out the windows out and put crushed up boiled sweets ( candy) inside the window cut out then bake as normal. You get a stained glass window effect. Your cute house looks gorgeous ❤❤❤ love and blessings xjx

Flour weights 125 grams a cup, sugar 200 grams per cup. With these 2 measurements memorized you can be sure of a accurate end product even if the original recipe has only volume measurements. All you do is multiply and or divide by them which is well worth it considering the much improved results you get for all your time, energy and money spent.

If your recipe doesn't give gms for measurements, you can use 1 cup of all purpose flour equals 120 gm.

Becky embrace the icing looking messy. It’s supposed to look like snow. My sister does some incredible gingerbread buildings. I believe to prevent distortion you take the ginger bread out the oven part way through and resize it when the dough is still soft. If you want to get really adventurous you can cut windows in and fill with crushed boiled sweets to give a stained glass effect.

I just finished rolling and freezing a double batch of butter scotchies. I’ve rolled and frozen 4 batches of peanut butter blossoms, a double batch of snickerdoodles and M&M cookies. Now I just have to make my chocolate cookies, sugar cookies, pumpkin pie cookies (Crumbl clone recipe), and Andes dipped Ritz. Oh..and fudge. May have gone overboard this year! I’m gifting most already baked and some frozen dough balls to a few people who can’t or won’t want a lot at once.. The worst part is I just have a countertop oven right now. 8-10 cookies at a time😢
