It's Quesadillas Time 

As you scroll through my episodes, you’ve probably noticed a bit of Mexican theme. Two reasons.
First, I’m from Texas and we ate Tex-Mex at least twice a week. Second, I worked as a server and bartender at a Tex-Mex restaurant for several years while I was in college. This is where I learned to cook many of the Mexican and/or Tex-Mex dishes I still serve to this day.
Today I’m going to show you how to make Chicken Quesadillas. But as usual, I have a couple of hacks to make this super easy and super quick.
We’re going to start with an already cooked, roast chicken you can buy at the grocery. I get mine at Sam’s. I know, it’s a trend with me…. But heck, they are $5 for a full roast chicken. You can’t beat that price with a stick!
