Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

We should all take example from this lady who shares her knowledge with everybody.....It is useless not passing what you have learnt in life to others who are younger!...then as Gina says..everybody can adjust according to own liking.....thank you dear Gina!

This video should be sent to the Smithsonion Institute for preserving such an important History. This is as good as it gets. What an incredible gift of Love for Nonna's children and her future generations. So that they should not forget their beautiful Italian Traditions. At a time in Nonna's life when most men and women her age are sitting drugged up in Nursing homes, she is showing the world that you can still be vital and joyful in your old age. What an incredible gift she has given both to her family and to the entire world. She is not only preserving tomatoes, she is preserving Tradition, she is preserving love, she is preserving joy! This is as good as it gets. I thank you from my heart to yours for such a kindness.

I agree!! She KNOWS what she's doing and as traditions get lost overtime....her videos need to be preserved!!! Because...I came across a remote region in Italy fighting to keep its traditions alive and it's essential we keep archives of these. The video I was referring to was about a small village that is in Italy, too close to Austria and Slovenia in terms of culture. Pitina is one thing I'd LOVE to try! Is it exportable? Had anyone heard of Friuli? Name of the region. Case in point.

And bless those who aren't with us anymore. We lost my mil three days before Mother's Day 2021. Thankfully, it wasn't due to Covid. Her health became compromised after more than three years of becoming bedridden. I'm grateful she was able to see her two youngest granddaughters grow into amazing young women.

Canned peeled tomatoes 1. Wash tomatoes 2. Boil, remove skin and core. Put aside. 3. Add salt and mash a little 4. Add to jars with fresh basil. 5. Bring to boil jars, lower heat then boil for 45 minutes. 6. Cover with rag and let cool down.

this is one of the most beautiful works that our Italian tradition has, it is a tiring job but that gives a lot of satisfaction when it is consumed, some think that all this effort is useless, but in reality it speaks because it has never tried the goodness of the sauce completely different from the one bought, last month I made 40 bottles, and I also check if the cap clicks, and if you click then it's not good :), thank you grandma for this important video for the new generations of everything the world that follows you.

I have left Italy to move to the USA 30 years ago by myself. Watching this video brought back memories of my childhood in Torino Italy, when after school I was going to my grandparents house and was helping my grandma Gina (like you) canning tomatoes, making preserve, ravioli and all kind of food. There was something special about those moments that I had completely forgotten. Thank you for sharing this, and in memory of my grandma I will now follow your video and try to make sauce and put in the same love that you like my grandma put into anything that you do. I'm not Italian, but watching Mama Gina's videos brings me right back to times with my Grandma, learning how to make her specialties. And today, when I make those dishes and eat them, it's like Grandma is right here with me. There's an old saying, 'No one is ever really gone as long as someone remembers them.' I'm so happy to watch Grandma Gina can. My grandma used to, she passed away before I had a chance to learn fron her. So I am learning with this lovely grandma. Thank you for sharing her with all of us.

I remember when my Aunt Gina, my parents, and the entire family would be in our basement with bushels of tomatoes. We used a hand grinder and as the oldest nephew, I was 6 then, I was the grinder. It seemed like we were in the basement for days. We had sauce for the entire year, for the entire family. Most of the times when she cooked these recipes, she was with my mother Philomena, and my Aunt Marion. Miss those days, love you Aunt Gina

I can see why you are in such great shape, your arms are toned and strong from all the work that you have done throughout your life. Cara Gina, this video warms my heart of the memories I had while canning 30 bushels of plum tomatoes I made for my family every year. I was so happy to see the electric machine you have. I was blessed when my husband bought one for me after so many years of hand-cranking the other one. I processed the tomatoes exactly the same way you do it in the video. You are amazing nonna Gina! We make tomato sauce to, at least 10 bushels and it is a labour of love! You are a blessing to your family and a big joy to watch. I can feel how happy you are making the tomato’s! I just love you! You are wonderful and I wish the world was full of nonna’s and their unconditional love! They make the world a better place! Our family lives in California, in the 70's, 80's and 90's my Dad owned a trucking company and once a year in tomato season-summer I think?? He would have a huge truck bring up what seemed like to me at the time,(I was 8 years old to 30+ years old) 1000s of tomato flats to our home and with my Mom leading all of us kids wash, peel etc. etc make the canned tomatoes for the year and we would freeze them in plastic containers. My Mom wasn't a cook like Grandma Gina, but canning these tomatoes each year was her way of keeping her Mom and Aunts customs alive and I'm grateful. We had a huge freezer just for tomatoes and it never lasted the whole year. Thank Grandma Gina, I just found you today, watched your pizza video and that remind me of my Uncle Dutchy who was the pizza maker of the family. And now the tomato video. Thank you!!!!

Thank you, Gina, for giving me my grandma back again. Grandma Felice was born in Cercemaggiore not too far from you. She passed away in 2000 at the age of 105. We had often tried to learn how she made our favourite dishes. Thank you for giving us quantities and the ability to see again how it is done. My daughter has made cavadill (Cercese). We are so glad we found you.

I love Mrs Gina she is such a sweet lady I love her voice and the way she is so humble and down to earth I wish I could meet her and spend a day cooking with her what a blessing it would be to learn from this sweet lady . I remember my Nona canning I the basement in Detroit. She canned all kinds of vegetables. She was hero. I miss her and Papa and they were wonderful to grow up with. ❤️

I’ve watched this video for a few years this time of year, tomato harvest time. It is a great check on doing what I need to d to turn my 80 tomato plants into food that will feed my family for months. It also guides my tomato planting schedule. Gina cans just like my mother did over 60 yrs ago, except my mother's jars had glass lids, the same jars her mother used in the early 1900s. Great memories! Gina is from the same area of Italy as my grandmother, she cooks and bakes very much like my family did and I try.

I've always water bathed my tomatoes. The tomatoes are high enough in acid that you don't need any extra. I always added a teaspoon of sugar to a quart jar of tomatoes... Never had a jar go bad. Love Gina ❤️❤️❤️

Note that this is either a basement or a garage where all the REAL cooking happens in a New Jersey Italian household. Note the sturdy work tables, TWO gas stoves, restaurant sized plastic bins and giant stockpots. Reminds me of Bergen County.🙂

This video is a very intellectual that every one should not take for granted.Preservation of foods like tomatoes should be learned by each household most especially during harvest season that abundant supply cost a lesser price .

I love watching Ginas videos!! Im a Polish Grandma :) I just learned about steam canning a couple of years ago and its so much easier than water batch canning. Much lighter and less water to mess with. Everything I can this way seals just as well

I don't boil mine after jarring. I cook them and spoon into jars while the tomatoes are still at boiling temperature. Then I put the lid on and put them quickly into a storage box and cover with a thick wool blanket. But you have to work fast so that the mixture stays at boiling temperature. After several hours, you will start to hear a click from each jar in the box meaning a good seal has been made. I have never had a jar explode using this method and my jars stay fresh and last for two, three years.

OMG, I cant believe how thorough this lady is, especially her age and how busy she keeps. I always wanted canning videos, and she has done it for me step by step with detailed description & hints, like what could make the jar break. as i said before in my older comments that im from Lebanon and our tomato is so big and round and delicious im sure like italian tomato , but here in Denmark where i live , tomatos is sooooooooooo expensive!! if i will buy only 2 kilos of these tomatos i will pay like 10 dollars .. but coz my favorite fruit is tomato which i can never live without it, i can feel the sweetness and the sourness in these tomatos running in my mouth .. i feel my mouth is watering just to watch all these tomatosssssss . How do I love a video? The like button just aint cutting it. Love the authenticity and very obvious passion for the tomato! I dream of doing this when I have the kitchen and space I could eat gorgeous pasta everyday!

Your so blessed Gina this texas heat killed off my 54 San Marzanno tomato plants I am now having to find a farmers market that has them to can up my tomato sauce and stewed tomatos, next year I will have to try Ramono’s as they tolerate heat better.

Gina, God bless! My memories were all my aunts picking the tomatoes from Grandma’s garden . They would bring them down to the basement , get them ready and the make half for Canning and half on the rack and cover its cheese cloth and make tomatoe paste. WOW! Flavor is heaven especially when she would cooked them for sauce . Thank you for the memories.

I got enough to start canning 😁 heat index today is 114 south texas 🥵 thank god my gas grill has a pot cooker side as I am not heating up my home canning inside lol…thank you Gina for showing me how
