ITM Fishing host Matt Watson has caught fish all over the world, but there are three fish on his bucket list that have eluded him. The Tarpon, the Cubera Snapper, and the Rooster fish. Each of these fish present their own unique challenge, and all are in wild and exotic locations. In this season premiere, Matt is jetting off to Costa Rica on an adventure to track them down and show you his best tips to catch them.

I feel your pain on the Tarpon, Matt. I've tried to get them spanning decades in 4 countries, and it's either too much wind (on the Caribbean) or they swapped guides to an incompetent, or they took me marlin fishing, or they flat-out said they don't fish for Tarpon anymore in the wilderness Tarpon lodge they built; they now run it as an eco-lodge. My opinion is a lot of people want to catch a Tarpon, and a lot of guides and lodges are happy to sell you an (expensive) trip. In other words, it's a bit of a racket. None-the-less, I plan to try again soon in the Florida Keyes. Tight lines. Dom

The bait fish you were catching are called cocinero, the “chefs fish” and they school hard and feed like piranhas busting up anchovies in the shallows . Great bait and eating like koheru bro

I went to Mexico last year and ticked off rooster fish spin fishing from the beach. Only a small one but saw a monster in the shallows . Hooked a tarpon but it jumped and threw the lure . Didn’t catch a cubera snapper but caught an ok pargo on a livebait
