In that fight he unleashed an attack which was stated to be star level. So saitama is massively stronger than a large star as he dispatched that attack with relative ease. If you really wank him with that he is solar system level.
For the last time it was planet surface level Boros even said it was planet surface. Also calling a move collapsing star does not mean it's star level just like Vageta's big bang attack but that could actually destroy the universe if collided with equal power.
