Ingredients
居酒屋風炙燒山藥
居酒屋風山芋ステーキ [1人份]
山藥 Yamaimo-100g
清酒 Sake-1大匙
味醂 Mirin-1大匙
砂糖 Sugar-1小匙
醬油 Soy sauce-1大匙
麻油 Sesame oil-1/2小匙
美乃滋 Mayonnaise-2大匙
蒜泥 Garlic paste-1/2小匙
味噌 Miso-1小匙
清酒 Sake-1/2小匙
紫蘇葉 Oba-2張
Preparation
(1) 100g of yamaimo
(2) Burn yamaimo over low heat to remove hairy roots
(3) Cut yamaimo into thick slices (in order to remain its texture)
(4) 2 leaves of oba, cut into thin shreds
Miso Mayonnaise Sauce
(1) 2 tbsp of mayonnaise
(2) 1 tsp of miso
(3) 1 clove of garlic, grate into puree
(4) (Optional) Add some chili sauce if you’d like some spicy taste
Teriyaki Sauce (Sauce for cooking yamaimo)
(1) 1 tbsp of Sake
(2) 1 tbsp of mirin
(3) 1 tbsp of soy sauce
(4) 1 tsp of sugar
Instructions
(1) 1 tsp of sesame oil
(2) Put to medium heat
(3) Add yamaimo
(4) Cook until the doneness you prefer
(5) Fry until golden brown
(6) Add combined sauce
(7) Cook until the sauce thickens
(8) Turn off the stove
(9) Plating
