Many part of this presentation is wrong. Chef Manish is not the first one to modernise Indian food and the modern Indian food (presentation wise and fusion) have existed for more than 10 yrs. I am in UK and have visited Tamarind, Banares and many other restaurants way back in 2003. All had this kind of food. Chef Atul Kochchar, Alfred Prasad, Vineet Bhatia have done all this before Chef Manish Mehrotra
