After watching dozens of videos from so called experts going thru endless loops and knots I finally found the Master at work. Thank you for making it so simple and easy.

While there are so many chefs & influencers that ppl admire bc of social media, I will always go to Chef Jacques to learn the fundamentals. (And I greatly admire) Thank you Chef!

Yep. I only wonder what will happen to the wings. He didn't tie them down so will they spread out at all? I haven't roasted a chicken yet so I'm honestly asking

@@BFrydell They will stay where they are because he cut the wing tips off, and since he says to cook the chicken for 20 minutes on each side then 20 on its back, the wings will get browned with the legs. I wish I had seen this years ago honestly.

The "issue" with absolute Masters, such as Mr. Pépin; even though his instruction is so clear, it all looks like a magic trick. Beyond Escoffier .. Jacques Pépin is truly my culinary hero.

This guy is absolutely awesome. One of the only truly great chefs with no accolades to prove it (i.e. Michelin star restaurants). He proves he's great with his skill and his skill alone. Imagine walking up to a homeless guy, asking him how to truss a chicken, and then watching him actually do it 4 different ways right then and there. That's the vibe I get from Jaques. He got his start on TV so you don't expect much. Then he blows your mind with a paring knife and an apple.

When he started on TV he already had tons of chef experience. You should look up his background - it’s fascinating.

​@@mikedeieso920The car crash ended his career in the professional kitchen, he was working in Michelin starred kitchens already at that point too. The crash damaged one of his arms too much. He reinvented himself into the educator and author we still have today.

I use the Closed Captioning for a little extra help on hearing. If you read the captions, OMG, how hilariously wrong they got the part about the wishbone. God bless Jacque Pepin for all his help. Gave me some confidence, saved me some money. :)

I used to watch Jacques Pépin as a kid when he was on PBS. The best shows also have a little life advice, Master Chef.
