Ingredients :
3 cups all-purpose flour ( 350 g )
1/2 cup powdered sugar ( 80 g )
1/2 cup unsalted butter at room temperature ( 120 g )
4 egg yolks
1 pc salt
10 ounces of jam
Sift the flour
Add the powdered sugar and salt
Start the machine and add one yolk at a time
Combine the butter
Pour in the shortcrust pastry and form into a ball
Let rest in refrigerator for 30 minutes covered with plastic wrap
Roll out with a rolling pin into a 0.16-inch loaf
Use an 8.5-inch cake pan
Trim the edges flush
Prick the base with a fork
Spread the jam
Roll out another piece of shortbread to form the grid
Finish the cake and bake at 356° F for 25 minutes
Allow to cool completely
Scatter icing sugar over the top
