Here are the ingredients used :
1 lb butter = 4 sticks (Room temperature )
1 lb sugar
1 lb flour
2 tablespoons baking powder
1 tablespoon cinnamon powder
1 tablespoon mixed spice
1 tablespoon nutmeg
1 1/2 tsp salt
1 dozen eggs
1 tsp orange zest
2 1/2 cups fruits blended with rum and wine
2 1/2 tablespoons vanilla
1/2 tsp almond essence
Browning ( add to the color you desire byt bare In mind It gets the color when baking so don’ t go crazy with the browning , It will make your cake bitter )
I added 4 tablespoons to get this color
Parchment paper to line the cake tin
Bake Time: 2 1/2 hours (large cakes) (1 hour sml)
Temp: 250 degrees

I just wanted to let you know i followed your recipe to the T… and the cake came out delicious! So delicious that everyone wants me to make it again!! I made 2 large cakes for the holidays and i have to hide a piece for myself. This is my first time baking black cake. I love the texture and the color. Not much of the pudding texture fan. I’m Trini American … and all my yardie folks can’t stop asking me for more!!!! I’m baking again this weekend … yes, we’re over the holidays but they won’t stop pestering me. And I’m making a cake for everyone!!!! I bought small tins with covers. Once their cake is done … no more!!! Girllllll…. I’ll never stop making this!!!! You rock!!!!!! Hi Marcilyn...good night I have been sitting here watching your Jamaican fruit cake videos and I must say I really love this texture...I don't like when it's like pudding...I love it more on the light and cake side...I heard u say that u preheat your oven to 250 degrees... honestly, I didn't know that you could bake a cake at such a low degree...pls excuse my ignorance... My dear u taught me something new...maybe that's the reason why my cake was cracking on the top...I don't know...could that be the reason? Thanks for sharing your recipes...I know I truly appreciate it..I am going to try this recipe and I will definitely let you know the outcome....may God continue to bless you and your family with long life and good health.
