I spend some times in Malaysia, I have never seen rice cooked with the entire lime inside. Maybe Jamie has seen something green cook with rice, it's called "Pandan leafs" which is widely used in Malaysian/ Singaporean dishes & deserts, it has a natural perfumes, it's leafs produces natural green color for food coloring for deserts. Instead of grating raw coconut flesh into the salad, maybe it will be better toasting the grated coconut for crunch, commonly use for making a creamy "Rendang" curry. Other than that, Jamie did a good job for trying new recipes. The banana leafs are great Eco friendly "plate" in South East Asian & India, it grow wildly, biodegradable instead of paper or foam box. Many Asian rice snacks are made by wrapping banana leafs with it.
