I built a 36" interior diameter oven using castable refractory cement, and fire bricks for 500 USD. it hasn't cracked and ive made close to 100 pizzas in it! Total run time has been like 30 hours and full temperature. Its possible and easy to do! Check my video out!
Jamie you left the most important dish out mate kleftiko am sure you know about it we had a clay oven in our garden in my village as wood was the only means of cooking n baking bread, its Basically lamb marinated with Origani then rubbed ib leaves b after the over is been fired for couple of hours the lamb is placed in the over is them sealed with clay it takes about 2 to 3 hours when its ready once you picked the bone the meat liturally falls off the bone with a heavenly taste n don't forget the potatoes specially sweet potatoes but you are right mate anything you cook in it just has a different far bettertaste
