Eich sounds like Eiche which means oak in German. The name Eich appears for a bunch of places and people in the German speaking world. Presumably it's a German name. "Ike" would make sense as a good Anglicized pronunciation. If you pronounce it the German way the final consonant is a sound we don't have in English. (Just in case you're interested... this consonant is technically referred to as an unvoiced palatal fricative.)
