Jelly doughnut biscuits are what you get when you try to make a less-sweet, less-rich baked version of jelly doughnuts, and then roll them too thin. Since this didn't come out as successfully as I'd hoped, so there's no Allrecipes.com recipe page link, but just in case you want to play around with this, here’s what I used and did. Enjoy!
For the sponge:
3 tablespoons white granulated sugar
1/2 cup all-purpose flour
1 packet dry active yeast (2 1/4 teaspoon)
2/3 cup warm milk
For the rest of the dough:
1 large beaten egg
3 tablespoons melted unsalted butter
1/2 tsp vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour, plus more as needed
- Make sponge, and wait 30 minutes
- Make and knead dough
- Let rise 1 hour or until doubled
- Roll and cut
- Let proof 45 minutes or until doubled
- Bake at 375 F. for 12-14 minutes
- Fill with jam, coat with sugar, and eat

I think your quote needs the previous few sentences for clarity, though. “Professor Murray also noted a little-known amicus brief that Ginsburg co-wrote in a 1977 Supreme Court case challenging the constitutionality of a Georgia law allowing the death penalty for rape. I have been making jelly "doughnuts" with store-bought dinner rolls for a couple of years now. I sometimes crave jelly doughnuts and wanted to find a healthier substitute for the fried kind. I use the Whole Foods dinner rolls that are sold in the bakery section, and there are several rolls in a bag. They are oval-shaped and look like the rolls in this video. I fix each jelly doughnut individually as needed. LIGHTLY butter the top of the roll, and put it in the microwave oven on high for 10 seconds. Then using a spoon, go into one of the ends of the roll and push in a small pocket for the jelly. Add a spoonful of raspberry jelly or jam into the pocket. Last step is to sprinkle a little sugar over the top of the roll (optional).

Thanks, Chef John, this recipe is something I needed for experimentation. Lately I have been seeing what I can do with milk powder, and in adding to your recipe I would include an excess of milk powder in the sponge. I also am stubborn about not wasting egg whites, and empathize with you in the quest for a decent mould-less baked donut. I think that milk powder fermentation is the way to go for a good consistency with low-moisture and fatty protein flavors.

Here in Germany we have special long tip for piping bags for filling our Berliner. Traditionally they're filled with raspberry or strawberry jam but lately all sorts of versions have become available like vanilla custard, chocolate or eggnog cream or nutella. Very yummy! I will definitely give this baked version a try.

Chef John, just by accident, you have created the most popular pastry in Germany! It has existed for many centuries and goes by different names, depending on the area. This 'final' version is known to be first created in Berlin, that's why they are generally known as 'Berliner'. But they are also named 'Krapfen' or 'Pfannkuchen'. They were the first thing I ate when I move to Germany 20 years ago. Kind of a Lovestory since :D Thanks for this video, you've nailed them!!

Interesting recipe Chef. I couldn't agree more with hand kneading dough. I use mixers but always knead by hand with every dough because the texture has to be perfect. No matter the careful measurements, the texture can always be slightly off.

Once I made "treasure biscuits" for my roommates. Before baking I inserted various foods into the center, like a piece of cheddar, a smoked oyster, peanut butter... Anyway, some of them were not amused. I thought it was a fun idea. But I learned that generally, people don't like culinary surprises like that. Jelly would have been a better choice. Bonus: A Bosnian insult- "You are a doughnut without the jelly!"

I used to do something like this years ago when I was a chef. It wasn't on the menu, just something we made for ourselves. We'd put jelly, peanut butter and chocolate between two biscuits and deep fry them.
