Today I’ll make “Jinmi-chae”, Stir-Fried dried squid strips with Korean red pepper paste.
It’s one of the most beloved Banchan, the side dish in Korean meal. Whenever my mom made this Jinmichae, she used to stir-fry the rice in the leftover sauce in the pan.
The warm rice with delicious red pepper sauce of Jinmichae was a small treat, but it’s something that I still miss. It's also one of the best lunchbox side dish in Korea. Hope you can enjoy the same!

Ingredients:
• 300g Jinmi-chae (=Dried squid strips)
• 4T Gochujang (Korean red pepper paste)
• 2T Gochugaru (Korean red pepper flakes)
• 2T sesame oil & 1T cooking oil
• 1T minced garlic (optional)
• 2T sugar
• 1T soy sauce
• 2T honey
• 2T Mirin
• 2T mayonnaise
• A pinch of black pepper
• 2T sesame seeds
Instructions:
1. Prepare the Jinmi-chae
• Rinse the Jinmi-chae in hot water to remove impurities and MSG.
• Drain the blanched Jinmi-chae thoroughly and roughly cut it with scissors.
• Toss with 2T of mayonnaise. Set aside.
2. Make the sauce & Cook
• In a frying pan, combine the gochujang, gochugaru, sesame oil, sugar, honey, soy sauce , minced garlic and mirin before heating up the pan. Heat up and bring to a simmer.
• Reduce the heat to low, add the mayonnaise-coated Jinmi-chae, and stir-fry over low heat. (Less than 3min. Please do not overlook.)
• Sprinkle with sesame seeds and serve.
Enjoy your delicious Jinmi-chae!
Tips: It’s a great Banchan (Side dish) which goes well with rice.
Also a good fillings for Gimbap.
