This Scottish chef is undertaking the task of preserving the memory of native peoples of Australia through their food. He has dedicated the last 17 years to discovering and defending this aborigine culture, excluded from the national culinary identity. During this time, he has visited hundreds of remote communities and documented the gastronomic riches that its inhabitants have shared with him, researching and experimenting in his Orana restaurant (recognized as Australia’s Restaurant of the Year 2017 by Gourmet Traveller) and using his media influence and international voice to show the potential that this culinary knowledge offers. In 2016 Zonfrillo launched the Orana Foundation, whose objectives range from supporting indigenous communities in the production and fair marketing of their products to the documentation of more than 10,000 native ingredients and the investigation of new uses.

Total respect for you Jock. Thanks for opening our minds to explore and understand this great country Australia. Your book btw made me smile and cry I commend you for going to the raw uncut version of you life to become a legend in your field and what you have done introducing real Australian cuisine and helping our indigenous communities build businesses with respect. One of the new judges on MasterChef Australia. I feel ashamed as an Australian that he has more knowledge of our indigenous peoples than I do. You sir, are a fucking legend. I've got a feeling this video will be getting a few more hits.

In 2002, Zonfrillo set fire to Martin Krammer, an apprentice chef in his kitchen, for working too slowly......"Many questioned the veracity of his stories, notably his claims of having visited "hundreds of Indigenous communities", as well as the stories of his alleged drug use.....On 5 October 2020... entered into voluntary administration, with substantial unpaid debts, amounting to approximately $3.2 million." Yep. A real legend.

people have been trying to promote indigenous ingredients in australia since the 70s, jock wasnt pioneering anything imo

@@monogramadikt5971 well he tried, better than not. I did so with my Anthropology degree in the late 90s and got nowhere fast despite trying and loving the culture and the people. I remember also the Ochre restaurant in the 90s with wattle seed. So take that. lol

Jock why why did you have to leave us you are so interesting to even bring in the Indigenous people of Australia to learn about them their food their healing medicine we would of appreciated you in New Zealand as i'm Indigenous of Aotearoa i hope there's more kind and intellect respectful people in the world like you god bless your soul in heaven Jock

i met danny kayes son in a dive bar on fitzroy st stkilda in the 90s when i was homeless, i was about to get kicked out for trying to play bad music on the grand piano they had in there, but he stepped in and put the bouncers at ease by telling them he would play the songs i wanted to hear lol, it was a pretty random and interesting experience and he was surprised that i knew who his father was etc. he was also very generous and brought me dinner then even though i didnt ask for it and would have refused if offered
