This is not a recipe - it's just an invitation to join me in the kitchen, where we will prepare a satisfying and nutritious vegetarian meal, using ingredients mostly from a recent mini foodhaul video (here: • Random Stuff - Mediter... ), plus some of my foraged and homemade ingredients.

At the end of his life, I do not think anyone will ever be able to say he did not live a full life, a life of adventure, culture, learning, and experience. This channel always amazes me, always has something new and exciting and different to bring to our screens, hearts, and minds. You, sir, are one of a very few people (I cannot think of even ten) that I would actually be interested in meeting in life -- and I am quite the hermit-esque doubly introverted person.

I know Mike has said the above is not a recipe but this is: Ingredients: For the vegetable mix: 1 large Onion Fennel 1 1/2 stick of Celery Garlic bulb 2 peppers 2 - 3 carrots 3 x tomatoes on the vine Salt Olive oil Slow cooking 3/4 pint Crabs eye beans small tin of Tomato puree Dried mushrooms Pickled walnuts / Worcestershire sauce Veg stock Can of chopped tomatoes Dash of Smoked Paprika A large teaspoon of Dried herbs A cup of green lentils 3/4 of a cup of pearled spelt cinnamon Powdered star anise Dried seaweed For final dishing up: Large flatbread/ wrap Shredded cabbage Spring onion Red pepper Grated cheese Method: Set oven at 200c Chop all the vegetables in the vegetable mix (except the garlic) and put into a roasting tray. Cover with some salt and some olive oil and toss until all the vegetables are dressed in the oil. Put in the oven until the fluid from the vegetables has reduced and they have caramelised (2 hrs-ish at 200c) . At about an hour take it out to take the tomatoes off the vines and give everything a stir. Once cooked take it out to let the vegetable mix cool down. Once cool put it and the cloves of garlic in a bowl. Put the vegetable mix and slow cooking ingredients into a slow cooker for 6 - 8 hours. Put it with the final dishing up ingredients into a flatbread/ wrap and enjoy. Could also use the vegetarian meal with rice/ pasta/ etc.

Cool. Except for the cheese and yoghurt, this would have been a vegan meal. I have substituted guac and hummus for these in the past

Again, very late to the party... just wanted to mention that you can also grind dried mushrooms into a powder using an electric coffee grinder. Then you can kind of use them like powdered stock and you don't notice the rubbery texture in the dish.

This is interesting, how you try to soak in some flavor into the beans. I like it. I would argue though, that the smartest way is to let the bean soak overnight, discard the water + put fresh water, cook it for 20 minutes, discard water again and after that combine it with the other ingredient. You actually should always discard water few times to wash out oligosaccharides OR suffer with flatulence.

Here I thought I was an oddball for ALWAYS trying to get every last bit of foody goodness out of cans, lol. Guess it comes from growing up poor, but wasting any little bit of food was just wrong. Love your care and attention to detail when cooking, you GET it, cooking is about putting yourself into the dish, not just tossing random ingredients together. Always love your work, keep it up!

This is such an amazing channel. Id honestly say its in my top 20. How you aren't more popular, I have no idea. I suppose everyone is more interested in watching the loudest or most controversial channels and they don't feel that they have time to just hang out and join you while you make a nice looking filling for a nice looking meal. Well, surely I have more than enough time for your wholesome and, quite frankly, wonderful content. I think it's about time I stop ending up on one of your videos at the end of a long day and I subscribed.

I see this a lot, so try to point this out to people: (extra) virgin olive oil (even if it is of very good quality) is only meant for COLD use, as over salads. It gets toxic very quickly when heated. For baking things in it is best to use classical olive oil.

Just now found this video as i was going through your channel. Khobez has two sides (a brown and white side), and they’re usually separated into two separate “rounds”. The brown one is usually more intact and better for wraps and sandwiches, and the white side for dipping and scooping

Or also Geo Watkins Mushroom Ketchup, I tend to use a mix of both that and the Hendersons relish if I'm making a vegetarian dish.

Great great vid i bought a slow cooker a year ago apart from diced beef or pork everything else is veg, water and spices you prepare it morning leave to, add water if getting dry, at end of night oh it's like being back at nanny's and bampy's house with proper cooked meal.

I had a go at this in the spring. Following your recipe but added leeks and parsnips. I was able to get all of the ingredients but used pearl barley as I had it to hand. I'm actually not a vegetarian, and might get shouted at for what I'm about to say... I froze the left over mix, and had a barbeque this week... it's an amazing burger and ribs topping on a barbeque!!

I made this recipe idea this week. It was terrific, especially with a couple of decent chillis thrown in. I follow a heart healthy diet and this is a great basis for lots of healthy meals. Thank you for the idea Mr Shrimp.

You can use a lesser quality of olive oil when heating it up like that. Extra virgin olive oil breaks down with heat very quickly. Better use for the money is drizzling it over the finished dish and using a lesser quality for cooking

This would be really rather delicious served with spaghetti or indeed rice. NOTE: It’s always important to wash lentils due to a huge amount of dust when they’re being harvested.

Pörkölt, on the stock cube packaging, is the Hungarian word for what the rest of the world knows as goulash. The similarity to "pork" is pure coincidence, because goulash is made with beef.

Open the bottom of the can of tomato paste too and just push it thru, every bit of the tomato paste comes out. My grandmother Depression survivor taught me this. Then to reduce the space occupied in the trash put the empty can on the floor, step on it, flattening it. She lived on the second floor of a two family house, so the more compact the trash the fewer trips to empty it.

With a couple of tweaks, this can very easily be turned into a fantastic vegetarian chilli. As with mushrooms, dried chillis tend to bring a lot more flavour than fresh and certainly in the UK, you can get a much wider variety of dried chillis than fresh. Optionally quickly toast the dried chillis in a dry frying pan to wake up the aromas, then soak them with the mushrooms before chopping and adding to the slow cooker and maybe add some ground cumin alongside the cinnamon and star anise powder. A combination of ancho, guajilo, mulato and pasilla chillis bring a great depth of flavour without too much heat, arbol chillis by contrast don't bring so much flavour but bring a good amount of heat. In the UK you can find dried chillis available pretty cheaply from various online sources.

A fantastic abstemious vegetarian/vegan recipe. I make these dishes quite often. Another good way is to roll them and pop them into the oven with extra cheese. If you are looking for a vegetarian Lea & Perrin's, look out for Henderson's Yorkshire relish. Same taste just without the anchovy wing.

Looks great & I bet it was really tasty. One tip, don't fill your tray up so much, the veggies will roast quicker and not sweat because of all juices filling the bottom of the tray
