I made this tonight with chicken and plantains and it was so good! My fiance is Nigerian and he said I did good. He even encouraged me to take a picture of his plate before he ate it (he never takes pictures of his food). I am so glad I found your channel, I am going to try your Egusi recipe next.

My mom is from Gambia she makes her Jollof rice in a different way and I think that's what makes West African food special! Everybody has their own style.

I'm a white boy from the south. Love all kinds of cooking. Nigerian, ghanian, Jamaican, Indian, Persian, Chinese, Japanese, Thai, pretty much anything spicy. Made this recipe and it was good as hell. Thanks,

you can actually see some west African influences in Southern Cooking, primarily soul food/ typically African American cooking. And that is doubly true of Jamaican food, lots of food in the Caribbean is a blend of west African, Indian, Spanish cooking and cuisine of the Natives that lived there prior to colonisation. Or just think how it came curry is so popular in Nigeria - the spices blends we often call curry in the west originated in India and when you think about how both Nigeria and India were British colonies it all makes sense. Food is so full of history. Tl;dr: if you like west African flavours see if there re an Caribbean and Jamaican restaurants

@yemonja100 The collard were sautéed and still a little crunchy but if you want a softer texture, try using the frozen variety, thawed and squeezed dry and continue with the saute. I am glad to hear you are considering our recipe, bute any recipe you choose one thing is for sure, you will have a wonderful dish! I enjoy Ben Okri's work as well! i must say your presentation is wonderful i know how to cook jollof rice but never could get it to not be all the way dry and your steaming process was a nice tip. i will use that and definitely let you know how it turns out when i cook it for my mum and brother who are coming to the states from Nigeria who want to eat Nigerian food:)

Hello. Just check on the bag of rice you will be using. It will say parboiled on the bag (great brand to use will be Uncle Ben's)

Must confess I love ur channel. Life outside Nigeria could b really kool but when it comes to food*sighs* its just rice, pounded yam, den once in a while beans . I must say the hardest part of each day for me is deciding on what food to make . Been longing for a change till I saw ur channel and would really appreciate if u could give me some recipes to other nice dishes, Nigerian or wherever, wanna try new things. I love love love love ur kitchen btw.

To be true-ful my mind was on how beautiful your complexion is ... you must be Igbo. But, I never knew baked cornbread was a dish served in Nigeria. I am African born in the United States and corn bread was a dish included in our Sunday Meals.I love Nigerian food and will try your recipes on my on. Please continue to share more with us.

Nice, I really enjoyed the video. I will try to make this, my last effort at making jollof rice failed. I am a little hesitant to put raw curry powder. In Jamaica one is taught to always sautee the powder.

Watching this in 2020 has reminded me how Nigerian jollof 🇳🇬cooking process has changed over the years and now the majority of Nigerians cook it similarly to that of the Ghanaian jollof 🇬🇭 process, thanks to RU-vid 😁.

I lived in Liberia. It seems like the Liberian version may not have used as many spices but a lot of other ingredients (vegetables) to help with taste. In years past tried my hand at it few times. Occasionally it turned out very well :-)

@MrFut23 Thanks for your comment. Tomatoes offer a lighter orange color but the red bell peppers deepens the color. Our Jollof rice recipe calls for the red bell peppers.

Great comment! The true Jollof, pioneered by the Woolof people of Senegal contains an assortment of spices similar to the spice mix curry. Spice trade in Africa (particularly from Egypt through Senegambia) dates as far back as 1100's, so spices have been in use in Africa for centuries now. The savory soups typically don't call for curry because the country of origin (Nigeria, depending on the recipe) used other flavoring agents to season these soups like Ogiri or Iru.Thanks for the comment!

Excellent!!! I am trying it out. It is very similar to Mexican rice but with the curry and thyme it must take another delicious flavor. By the way, do you measure the amount of water also based on the cups of rice? GRACIAS!!

I just made it but forgot the chicken boullion.... it still had a nice flavor. I did struggle with the water measurement though. Any tips? I usually do 2 x the cups of rice. Oh and one more thing, do you leave some of the sauce out to later bath the meat/chicken?

I've seen people make it in the pot but we usually use a foil tray and put it in the oven for about an hour - and hour and a half. There's usually mixed vegetables or something in it as well.

Wow, I want see how you cooked those collard green. It seems like a saute..those greens are hard to make soft. Are yours still crunchy? I am making Jollof rice for thanksgiving but want to make a smaller pot because it will not get eaten. I am considering your recipe because the ingredients will not break my bank! Thank you for posting this video. I am Black American who is wanting to know more about African cuisine. I am reading Ben Okri and he mentions eguis, pepper soup and jollof rice. Yum!
