They did it in a previous video so they didn't repeat rules. They choose cards to put in their bag, whether it be normal food items or contraband (illegal stuff). The sherif will decide whether or not to check their bags or not. If the sherif checks and they have contraband, they give the sherif money. If they don't have contraband, the sherif gives them money. Contraband is worth more points in the end, so it's worth it to try and smuggle some without getting caught.
