Ingredients:
- 2 cups basmati rice
- 1 lb lamb, chicken, or beef
- 1 large onion, thinly sliced
- 1/2 cup raisins
- 1/2 cup slivered almonds
- 1/2 cup shredded carrots
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground cloves
- Salt to taste
- 4 cups water
- 1/4 cup vegetable oil
Instructions:
1. Rinse the rice under cold water until the water runs clear, then soak the rice in cold water for about 30 minutes.
2. In a large pot, heat the vegetable oil over medium heat and add the sliced onions. Cook until the onions are golden brown and crispy. Remove half of the onions and set aside for garnish.
3. Add the meat to the pot and cook until browned.
4. Add the raisins, almonds, carrots, cardamom, cinnamon, black pepper, cloves, and salt to the pot. Stir well.
5. Drain the soaked rice and add it to the pot, stirring gently to mix everything together.
6. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the rice is cooked and the water is absorbed.
7. Once the rice is cooked, fluff it with a fork and top it with the reserved fried onions.
8. Serve the Kabuli Pulao hot and enjoy!
