Kadai Chicken is a popular North Indian dish that boasts bold and vibrant flavors. Ingredients:
1 kg chicken, cut into medium-sized pieces
2 large onions, finely chopped
3 large tomatoes, pureed
2 green bell peppers, cut into cubes
4 tablespoons oil
Salt to taste
Fresh coriander leaves for garnish
For Marinade:
1 cup yogurt
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
1 teaspoon coriander powder
1 teaspoon cumin powder
For Spice Paste:
2 tablespoons coriander seeds
1 tablespoon cumin seeds
4 green chilies
4 dried red chilies
1 tablespoon black peppercorns
4 green cardamom pods
2 cloves
1-inch cinnamon stick
1 tablespoon ginger-garlic paste
Instructions:
Marinating the Chicken:
1. **Prepare the Marinade**: In a large mixing bowl, combine the yogurt, ginger-garlic paste, cumin paste, turmeric powder, green and dry red chili paste, red chili powder, Kashmiri red chili powder, garam masala powder, coriander powder. Mix well to form a smooth paste.
2. **Marinate the Chicken**: Add the chicken pieces to the marinade, ensuring each piece is well coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour (overnight for best results).
Preparing the Spice Paste:
3. **Roast the Spices**: In a dry pan, lightly roast the coriander seeds, cumin seeds, dried red chilies, black peppercorns, green cardamom pods, cloves, and cinnamon stick over medium heat until fragrant. Allow them to cool slightly.
4. **Grind the Spices**: Transfer the roasted spices to a grinder or blender, add the ginger-garlic paste, and blend to form a fine paste. Add a little water if necessary to achieve a smooth consistency.
Cooking the Kadai Chicken:
5. **Heat Oil**: In a large kadai or wok, heat the oil over medium heat. Add the chopped onions and sauté until golden brown.
6. **Add Tomato Puree**: Add the tomato puree to the onions and cook until the oil separates from the mixture.
7. **Add Spice Paste**: Stir in the prepared spice paste and cook for a few minutes until the raw smell disappears.
8. **Cook the Chicken**: Add the marinated chicken pieces to the kadai, along with the marinade. Cook on medium heat, stirring occasionally, until the chicken is cooked through and the spices are well incorporated.
9. **Add Bell Peppers**: Add the cubed green bell peppers and cook for an additional 5-7 minutes until they are tender yet crisp.
10. **Adjust Seasoning**: Add salt to taste and mix well. Cook for another 2-3 minutes to ensure all flavors are well combined.
Serving:
11. **Garnish and Serve**: Garnish the Kadai Chicken with fresh coriander leaves. Serve hot with naan, roti, or steamed rice.
