Ingredients Quantity
For Kadai masala.
Coriander seeds 1 Tbsp
Fennel seeds 1 Tsp
Black pepper 1 Tsp
Cumin seeds 1 Tsp
Whole Dry Red chillies 3 no
Fry Vegetables.
Oil 2 Tbsp
Carrot cubes 1 no
Cauliflower florets 1 no (small)
Green peas ¼ cup
Potato cubes 1 no
Salt to taste
French beans (cut in 1 inch piece) 8-10 nos.
For Kadai gravy
Oil 1 Tbsp
Bay leaf 2 no
Dry Red chilli 1 no
Star anise 1 no
Cardamom 2 -3 no
Cinnamon 1 no
Cloves 4-5 no
Black cardamom 2 no
Cumin seeds 1 Tsp
Coriander seeds 1 Tsp
Onion chopped 2 no
Tomato chopped 2 no
Salt to taste
Kashmiri Red chilli powder 2 Tsp
Coriander powder 1 Tbsp
Turmeric powder 1 Tsp
Cumin powder ½ Tsp
Garam masala ½ Tsp + 1/2 tsp
Water ½ cup + 1 cup
Curd 2 Tbsp
Green capsicum cubes 1 no (small)
Onion cubes 1 no
Coriander chopped 1 Tbsp
Water as required
Fresh Cream (optional) 2 tbsp
Brown onion 1 Tsp
Ginger juliennes ¼ inch
Paneer cubes ¼ cup
Kadai masala for garnish
Ginger juliennes for garnish
Coriander sprig for garnish
Method: -
1. In a kadai add coriander seeds, black pepper, fennel seeds, cumin seeds, dry red chilli and keep stirring on low heat for 5 min till the spices are dry roasted.
2. Remove it in a grinding jar and allow it to cool.
3. Heat oil, in a kadai and add carrots, cauliflower florets mix and sauté for 2 min.
4. Now the mixture is cooled down grind it into coarse powder.
5. Now add the green peas, potato. Mix it well.
6. Now add salt and give it a mix and continue to sauté for another 3 min.
7. Add French beans, and cook it well
8. Remove the veggies in the bowl and set it aside.
9. In the same kadai add oil, bay leaf, dry red chilli , star anise, cardamom, cinnamon, cloves, black cardamom. Mix it well
10. Then add cumin seeds, coriander seeds, and chopped onion. Sauté on medium heat for 7- 8 mins till brown in color.
11. Now add the ginger garlic paste, give a mix and saute on low heat for 2 mins.
14. Add tomatoes and mix it well.
15. Now add salt, mix it for 3 to 4 min.
16. Add Kashmiri red chilli powder, coriander powder, turmeric powder, cumin powder, garam masala and mix it well.
17. Now add the water, mix and saute on medium heat.
18. Add curd mix it, then add green capsicum, onion give the mix for 3 min on low flame.
19. Further add the sauté veggies, and mix it well.
20. Then add the water, give it a mix Cover and cook on medium flame.
21. Take coriander leaves and chop it.
23. Now remove the lid and mix it well.
24. Finally add kadai masala, fresh cream (optional), chopped coriander, brown onion and ginger julienne, garam masala again mix it well.
25. Add paneer and give it a mix.
26. Remove it in a serving kadai, garnish with kadai masala, ginger julienne, and coriander leaves.
