A one-pot meal made in temples across South India. A blend of country vegetables, sundakkai, kunukkus in tamarind and a secret spice paste makes this a sunday favourite. Enjoy this recipe. Recipe text in english below video.

Ingredients:
* Country vegetables (cluster beans, broad beans, raw bananas, colocasia, snake gourd, white & red pumpkin) - 2 cups
* Rice - 2 cups or 250 gms pressure cooked
* Toor dhal - 150 gms (pressure cooked with turmeric)
* Tamarind - a big lemon size
* Sundakkai or turkey berry- 3 tbsp (fried in oil)
* Water - 1 lt
* Turmeric - 2 tsp
* Salt
Spice paste - Ingredients
* Sesame oil -2 tsp
* Asafoetida - 1 tsp
* Red chillies - 4 nos
* Coriander seeds - 2 tbsp
* Channa dhal -2 tbsp
* Whole black pepper - 1 tsp
* Grated coconut - 6 tbsp
Kunukku / Vadais - Ingredients:
* Channa dhal - 100 gms
* Toor dhal - 1 tbsp
* Red chillies - 3
* Asafoetida - ½ tsp
* Curry leaves - 1 sprig
* Salt
Method:
1. Soak channa and toor dhals in water for 30 mins and grind to a coarse paste along with asafoetida, salt, red chillies and curry leaves. Fry in oil and make vadais. Set aside.
2. In another wok, heat oil and add ingredients mentioned under spice paste and fry till lentils are golden. Do not add the grated coconut to this.
3. Once the spice paste ingredients cool down, grind to an almost fine paste along with fresh coconut. Set aside.
4. In a vessel, extract tamarind juice using 1 lt of water and cook the vegetables along with salt and turmeric.
5. To the cooked vegetables add the cooked toor dhal and mix well. Ensure the vegetables are not over cooked.
6. Add the ground paste to the to the cooked vegetable mixture.
7. Add water if this is too thick.
8. Add the fried vadais to this kuzhambu and check for salt.
9. Add the fried turkey berry / sundakkai to the kuzhambu
10. Add oil to a wok and once hot, temper with mustard seeds, red chillies and curry leaves.
11. Pour over kuzhambu.
12. Mix rice and this kuzhambu in proportion you like. Garnish with more vadais, sundakkai and sesame oil if needed.
