Kaipola, also known as banana cake or steamed plantain cake, is one of the most authentic Malabar dishes. The dish is a sweet combination of egg and banana. Kaipola, the quick and easy recipe, is a specialty of Kerala, most specifically among the Muslim community in the state.
Ingredients
Plantain, ripe-2, diced small
Eggs- 6
Sugar, white or brown- ¼ cup
Cardamom powder-1/2 tsp
Raisins- 1 handful
Cashew nuts- 1 handful
Ghee/butter-1 tbsp
Ghee- for shallow frying
For Garnish:
Raisins, roasted in little ghee/butter-1 handful
Cashew nuts roasted in little ghee/butter
Instructions
Cut the plantains lengthwise and slice into small pieces.
Shallow fry the plantains in ghee until golden brown and keep aside.
Take a medium sized pan or pressure cooker, grease inside with 1 tbsp ghee/butter.
Whisk the eggs well.
Combine beaten eggs with sugar, cardamom powder.
Add the fried plantains to the egg mixture.
Pour the mixture into the bowl. After 10 mins add fried resins and cashews to garnish.
cook this mixture for 20 to 25 minutes in low flame ,till a fork inserted into the center comes out clean.
Notes
Don't forget to grease the bowl, otherwise the cake would stick to the bottom of the bowl
