Karachi's Street Food Bun Kabab: Always Super Delicious and a Hit! Previously shared a reel of its assembling, but this time, here's the full recipe.
Ingredients:
For the Kababs:
1 cup chana dal - soaked for 2 hours and drained
4-5 grated garlic cloves
4 inch grated ginger
2 bay leaves
2 inch cinnamon stick
Salt to taste
1 tsp fresh coriander seeds
1 tsp cumin seeds
1 tsp crushed chili flakes
1 tsp chili powder
2-3 whole red chilies
1 star anise
4-5whole black pepper
3-4 cloves
1 black cardamom
2 green cardamom
1-2 pcs of Mace
1/4 cup fresh coriander leaves, chopped
1 onion, finely chopped
2 green chilies, finely chopped
1 egg (optional, for binding)
For Assembling:
Burger buns onion, thinly sliced
Tomato, thinly sliced
Lettuce leaves or cabbage (optional)
Green chutney (blend mint, coriander, green chilles, lemon juice, cumin seeds and salt)
Tamarind chutney
Butter or oil for frying kababs and toasting buns
2 eggs whites for frying
Method:
Pressure cook all ingredients as shown in the video for 10 mins. Then combine the mixture with fresh coriander, onion, green chillies and egg. Divide the mixture into equal portions and shape them into patties.
Coat each patty into egg whites and fry these patties until they are golden brown and cooked through, about 4-5 minutes on each side.
Heat a little butter or oil in a pan and lightly toast the burger buns until golden brown.
Spread green chutney on the inside of each bun.
Place a patty on the bottom half of each bun.
Add a few slices of onion, tomato, and lettuce or cabbage (if using).
Drizzle some tamarind chutney (if using)
Cover with the top half of the bun.
Serve the Bun Kababs hot with extra green chutney and tamarind chutney on the side.
