÷ Step 01 : RICE
Wash and Soak 1 kg Rice in water for 1 hour.
Sela Rice for 3 hours max
Basmati Rice 1 hour max
÷ Step 02 : POTATOES
Cut and dip 4 potatoes in water. Add half tsp yellow food colour (zarday ka rang)
÷ Step 03: CHICKEN MARINATION
1 kg Chicken
1 cup yogurt
Salt 1 tbsp
Red chilli powder 1tbsp
Red chilli Flakes ½ tbsp
Bhuna kuta Zeera Dhaniya 1 tbsp
Haldi 1 tsp
Zarday ka rang/food colour as required
Mix everything and keep it aside
÷ Step 04: Lets start cooking
1 cup oil
1 tbsp sabit zeera
Add sabit Garam Masala
-2 tez pattay
-2 green cardamom
-2 black cardamom
-1 tsp sabit zeera
-1 star anise
- 7-8 black pepper corn
-5-6 long
1 tsp ginger paste
1 tsp garlic paste
Saute for a minute
Add 4 medium tomatoes blended with 3-4 green chillies.
÷Step 05: Jhol (hara masala)
Half cup yogurt
2 medium size tomatoes cut
8-10 green chillies
Half bunch chopped coriander
8-10 aloo bukhara
½ tsp chaat masala
½ tsp garam masala powder
Mix everything keep it aside
Now add Marinated chicken to your tomato gravy and cook for 5-10 minutes on high flame
Add potatoes and cook for another 10 minutes. Cover and cook for 10 minutes
÷Step 06: RICE BOILING
Boil the rice using all the tips mentioned in the video. Strain when 80% done.
Layering
Base Masala gravy
Top with jhol
Sprinkle food colour
Spread rice.
Pour kewra water, add oil
Cover and keep the flame high till you see steam
Lower the flame for 15-20 minutes and then enjoy your biryani 🤤
