Spicy🌶️🔥, flavorful, and oh-so-satisfying 🦐prawn curry 🍛simmered in creamy🥥 coconut milk - the perfect comfort food!
Ingredients
* Prawns (cleaned and deveined)
* 1 tablespoon vegetable oil
* ¼ onion, chopped
* 1 tomato, chopped
* Freshly grated coconut or 1 cup coconut milk
* 2 tablespoons chili powder
* 1 tablespoon coriander powder
* 1 teaspoon turmeric powder
* Salt to taste
* Chopped coriander leaves (for garnish)
* Rice (for serving)
Procedure:
1. Heat 1 tablespoon of oil in a vessel. Add the chopped onion and saute until translucent.
2. Add the chopped tomato and cook until softened.
3. Once cool, blend the cooked onion and tomato into a fine paste.
4. If using fresh coconut, grate it and blend with water. Strain the mixture to extract the coconut milk.
5. Heat another tablespoon of oil in the same vessel. Saute the remaining chopped onion until softened.
6. Add the chili powder and saute for a few seconds.
7. Add the tomato-onion paste, a little water, coriander powder, turmeric powder, and salt. Cook well.
8. Add the cleaned prawns and cook for a few minutes.
9. Pour in the coconut milk (or strained coconut milk mixture) and simmer until the prawns are cooked through and the gravy thickens.
10. Garnish with chopped coriander leaves. Serve hot with rice.
