Karele Pyaz ki Sabzi || how to make onion and bitter gourd

bitter gourd karela 1/2 kg
onions 250 gram or 3 med sliced
tomato 250 grams or 3 med sliced
green chilies 3 chopped
ginger 1 inch julienne
ginger/garlic paste 1 tsp full
salt 1 tsp
cumin seeds 1 tsp
red chili pwd 1/2 tsp heaped
red chili flakes 1 tbsp
cumin pwd 1/2 tsp heaped
turmeric 1/4 tsp
oil 1/2 cup
first fry karele in oil for 5 minutes.
put them in a plate and add tomatoes,spices and g/g paste in the same oil.
mix and cover the lid.
keep the flame low to cook the tomatoes completely.
then add onions in it.
cook 5 minutes to soften the onions and then add 1/4 to 1/2 cup water in it.
give it a boil and add fried karela in it.
mix it well
keep the flame slow and cover with the lid.
cook it 10 to 15 minutes .
when all water gets dry add chopped green chilies and mix.
simmer for 2 mins and serve.
TIPS:
1. do not put salt on bitter gourd.just keep them dry and rub them with a clean kitchen towel or tissue .
2. do not add raw water,always add water in the gravy before adding bitter gourd.
3. always dry all water from the gravy and make it bhuna hoa. (i dont find a right word for it )
