I'm a new greek, yup You read that right 😂 I am an almost 50 yr adoptee and just found out my maternal side is greek rather than Albanian like we always thought. Which really makes a lot of things make sense 😂. I've always been drawn to greek foods but have never really made any myself until a few weeks ago I made moussaka , which turned out great! Anyway, I have spent the last few days watching your videos and I just wanted to say ty!! You have made recipes more approachable and I love that you make them so adjustable for personal preference while at the same time keeping them authentic. Thank you for this wonderful video! I saw a cake made with robin's eggs, and they had topped the cake with homemade little egg nests out the the kataifi. Now I know how to make it. Thanks again!
If the kataifi pastry is left out in the open air, it dries out and crumbles or cracks. Placing a slightly damp kitchen towel on it will help keep that from happening next time. Hope that helps!
@@DimitrasDishes I just take it out from fridge and when I pull it while it's in wet towel too, it breaks into shorter even if slowly I pull it and seperate it, end up I use them for kunafa. Do we need to let it in room temperature for 1-2 hours firstly before making the nest? Or does I use a poor brand kataifi dough or it's me who have no skills? 😂😂😂
@@conniekunelis8982 We fill it a few times a day. Big water drinkers here! All 7 of us. My fridge has an ice dispenser so, I don't add any to the jar. But, I have an extra one that I use for dinner parties. I usually will add juice to that one.
