NuCanoe is my kayak of choice. The frontier 12 will hold ya. Its pricier than some, but I'm a believer in getting the right one at the beginning instead of buying a compromise, not liking it, selling it, and then lose money.

Need more specific budget than not breaking the bank, but some good, stable platforms that are budget friendly include the Pelican Catch 120, Wilderness Systems Ride 135, Ascend FS12T, Vibe Sea Ghost and Nucanoe Flint.

Yeah the one Ren caught swallowed the hook. Not much we can do about that. We use circle hooks to avoid it but it happens now and then. It swam off fine but who knows if it survived in the end. Nothing gets wasted in the ocean, though.
