Ingredients: One 4 to 6 pound duck 1 apple rough chop 1/2 onion rough chop 1 stick of celery rough chop salt/pepper to taste dried rosemary dried parsley 3 pounds Yukon Gold Potato chunks Dry the duck with paper towels and stuff it with your celery, onion and apple. I did not oil my duck, but I think you should. Salt and pepper your duck, then sprinkle with paprika. Bake your duck @ 400F for 60 minutes Remove your duck from baking dish and add your potatoes. Bake 375 for 30 minutes. Take out of oven and turn your potatoes over, then tent with aluminum foil and bake 375 for 30 more minutes. Allow to cool 10 minutes then serve. Thank you for watching! That looks so good. One thing my mom always did was to cook the duck on a rack, so all that duck fat would drip into the bottom of the pan, keeping the duck beautiful and glistening throughout
I've watched a few of Kendall's videos and have promised myself to try some of her recipes. As a duck hunter I always had ducks and geese around and was always looking for new ways to cook them. Most of the recipes you get from other hunters weren't very good. Duck is easy to mess up. Here's a suggestion. Before stuffing the duck with apples take a knife and poke a few holes through the plate between the body cavity and the breast meat. Cook breast down. The sweetness of the apple will run into the breast meat flavoring it. Use a good juice apple such as a Gravenstein. I know that wild ducks don't have the fat content of a domestic but if you like duck it's still pretty good.
Everyone always reaches for turkey when Christmas and Thanksgiving come along....sure it feeds a lot of people. A frozen duck is pricey (about $18-$20) and only 6 pounds or so. But nothing beats that meat. The taste is always moist, even crispy. Turkey can be dry and bland. Duck is always moist, but not fatty (if decent quality) and has a flavor and taste that you can never get from turkey. I'd rather cook two ducks than a turkey for any holiday. Pricier, but so, so much more elegant and delectable. Turkey is just plain, can never go back. Turkey is good but it's just not roast duck. A real holiday bird and a treat.

Oh my stars! I haven't had duck in over 25 years. I had it once in high school when our home ec class prepared duck a l'orange for part of our holiday meal. Some years later, a boyfriend made it for me. It was delicious both times! I've just never thought about adding it to my menus. On my tight budget, this would be a super treat but I think worth it. TFS!

Yes Tom, I looked at a goose maybe 7 years ago and back then I remember it was $60 or so. I haven't seen one in the stores here in Southern Indiana since then. I've baked/roasted a goose years before that before RU-vid and they're so good. Your duck will turn out wonderful, I just know it and Merry Christmas! ~Michael

Excellent skill and good recipe. ( You removed Tail piece of duck. Tail piece of duck or a chicken is , perhaps, the most delicious part of the birds. Try some day. Personally I do not stuff turkeys or birds any more. I just prepare the stuffing in a separate pan, but you can do as you wish. Thank you for your question and watching! ~Michael
Looks good! Incidentally, a few years ago my inlaws thought they were doing us a favor by buying us a turkey to cook on Thanksgiving. They don't speak English, so they made a goof at the store. We ended up having Thanksgiving duck.

Duck is delicious and thank you for watching. The Asians particularly like duck as well as hunters. Duck & Goose are available at large well stocked grocery stores that have a lot to choose from. A smaller store wold probably never carry them because of sales. They don't sell that well. They are usually only available around Thanksgiving/Christmas time around here. I bought mine at a store called Aldi's. Aldi's is a smaller store, but they are not based here in the USA. They are European and carry some specialty things but mostly every day things. They are always frozen and never sold fresh around here in Indiana. Although Schnucks Grocery Store had quite a few of them in their meat department thawed and ready to go, the last couple weeks. Mine was $2.49 per pound. I did see them at Walmart frozen for $2.89 per pound. So right now, you might be able to get one at Walmart, maybe even marked down to get rid of them since they usually only sell around this time of year. ~Michael
Is it really so hard to get a duck in America? You can get them at most big supermarkets and all good wet markets in my home country, England. I live in China now where it's even more common. Overall it is one of the most common farm animals on the planet.

I might have to try this. I've never been interested in eating duck because on all of the cooking shows I watch they serve it rare and bloody and that turns my stomach!
Generally cooking a whole duck or say only cooking duck legs, you cook all the way. Cooking the breast only, yes you definitely do not want it all the way done. All the ducks that I buy are from Indiana and are quite good. To me it is a special treat to have duck. Thank you K Lab! ~Michael

Thank you for your suggestion. I did not use oranges because I did not want orange juice mixed into the duck fat. There was excess duck fat of course and I saved it for future uses, so no oranges for me. I apologize. ~Michael
Duck is hard to get right Dries really easy And if want to keep it warm you need every trick in the book. And dont get me started reheating. Nah, i prefere the wild duck. Any day
Should've salt and peppered the potatoes before cooking them. Also made a better effort to deglaze The pan. Also. Fresh parsley is way better than dry.
