Kerala Kinnathappam | Instant Recipe | അരിപൊടി കൊണ്ടുള്ള കിണ്ണത്തപ്പം
Kerala Kinnathappam is a very delicious Kerala snack recipe. This Kinnathappam is an instant recipe made from rice flour, palm jaggery and nendran banana. This Kinnathappam is very tasty and can be served as an evening snack.
NOTE: This recipe makes 4 Kinnathappams.
Ingredients:
Rice Flour - 500 gms
Coconut - 1 big
Palm Jaggery/Normal Jaggery - 500 gms
Cardamom - 6
Nendran Banana - 8 (use good ripe ones)
Water - 300 ml (to melt the jaggery)
Warm Water - 600 ml (to extract the coconut milk)
Preparation:
1 - To prepare the Jaggery syrup:
Add crushed palm jaggery into a vessel and pour water.
Heat this until the jaggery melts completely and turn off the flame.
Set this aside and let it cool down.
2 - To prepare the Coconut Milk:
Add grated coconut to a mixer jar. To this add 300ml warm water and grind it.
Pass through a sieve and extract the first batch of coconut milk.
Again add back the ground coconut to the mixer jar.
Add another 300ml of warm water and grind again.
Pass through a sieve and extract the 2nd batch of coconut milk.
3 - To prepare Kinnathappam:
Add cardamom powder to the rice flour.
Pour the jaggery syrup into the rice flour through a sieve (to get rid of the impurities) and mix well.
Next add the first batch of coconut milk and mix until there are no lumps.
Add chopped nendran banana to this batter and incorporate it into the batter.
Now pour the second batch of coconut milk and mix well.
Finally add melted ghee and mix once again.
4 - Steam the Kinnathappam:
Apply some melted ghee on the plates or the baking tray in which you plan to cook the kinnathappam.
Pour the prepared mixture into the baking tray and level the mixture.
Next place the baking tray inside a steamer (fill the bottom of the steamer with water and then place the tray)
Steam the kinnathappam for about 30 minutes on a medium flame until it is well cooked.
Remove the kinnathappam from the steamer and let it cool down, until it is slightly warm.
Cut into desired shapes and serve.
