Keto Egg Custard, Quick Stovetop Recipe by Susilee Dean
Ingredients:
2 cups milk
1/2 cup half-and-half
2 eggs
1 teaspoon vanilla extract
1 tablespoon cornstarch
6 to 8 packets Stevia
Nutmeg or cocoa (optional)
Sugar-free chocolate chips or chocolate bar (optional topping)
Dissolve the cornstarch in a few tablespoons of water. Combine the milk, half-and-half, eggs, vanilla, cornstarch/water, and Stevia in a saucepan. Beat with a wire whisk until smooth. Place the pan over medium heat, and whisk continuously until the mixture thickens and starts to bubble around the edges. Remove from the heat, and pour into individual custard cups. A teaspoon of cocoa can be added to each cup, while it is still hot, and stirred to melt the cocoa. Or nutmeg can be sprinkled on top of the plain custard. Place the cups of custard in a pan of ice water to stop the cooking process. Serve warm, or refrigerate and serve cold.
