TIP: Put a wet paper towel beside your onions when you're cutting them. The acid released by the onion seeks moisture. The wet paper towel will absorb it and the onion will not bother your eyes.

Good recipe, but American cheese is definitely not traditional on Philly cheesesteak. It's not even cheese, it's cheese food process. Provolone is the one to use. Real cheese.
