28 ounce canned whole tomatoes, San Marzano
1 cup vegetable stock
1/4 cup olive oil
8 teaspoon fresh garlic, slivered crosswise
1 teaspoon kosher salt, or to taste
Crushed red pepper flakes to taste
1/2 teaspoon dried oregano
2 teaspoon fresh basil, chopped

I don't mind using my hands as kitchen tools but when I need to break up whole canned tomatoes, I use my kitchen shears right in the can. Same concept as using scissors to chop up fresh herbs in a container. ✂️ Looking forward to making this sauce!

Thank you! I'm definitely going to give this whirl - and may literally give it a whirl! 😂 I like my pizza sauce smoother so I may either opt for crushed tomatoes or toss it in the blender for that whirl. I'd leave it just like this for "pasta" or recipes. It looks delicious! I agree that the San Marzano brand is good, but did you know they aren't actually DOP San Marzano tomatoes, but are California tomatoes? I was shocked when I first learned it - I hadn't properly read the can. My favorite actual DOP San Marzano tomatoes are the Pastene brand. I'm sure there are others that are good. I've also used Cento, but prefer Pastene, so only buy Cento or San Marzano when I can't get my fave. BTW, the last time I saw them, the San Marzano tomatoes had changed the name on the can to San Merican - not sure if they are changing the kind of tomato they use or changed the name because of the confusion over their tomatoes not being DOP when people naturally make that assumption. Or perhaps they are carrying a new product using a different tomato and will offer both? I should Google that...

Depending on super smooth vs a little chunky, you could use an immersion blender too to help keep some of the texture over what a blender would do. I wouldn't be surprised if they had to change the name for some type of lawsuit that happened or some type of advertising law that got updated. Sounds like it was for the best, though!

Would it still be low carb if you fry chopped onions before you fry the chopped garlic? I love onions and garlic together, especially in marinara.

It depends how many onions, but you can definitely fit onion and garlic into it and it would still be quite low-carb.

Pizza sauce is already keto friendly. This looks good but not needed for pizza. It would work well on pasta though. Just my opinion! Thanks
