@@ema7561 its a pre partition dish invented before Pakistan, so its indian. The term indian when talking about food, music clothes etc can also include Pakistan and Bangladesh as they are in the Indian plateau. I'm a pakistani who can't be bothered with individual country names and just call it indian and people shouldn't be offended because its correct.

And thanks to people generalizing food from this region as Indian ,most people are ignorant of Pakistani cuisine even as they eat in Pakistani run restaurants. They call it Indian food. I dont think you would sit in a korean restaurant and call it chinese food..if you want to generalize Asian food. A lot of dishes are particular to and were invented in Pakistan.Pakistan does not get its due and India gets the credit. Probably time people got a little educated , aware of the world and a little less lazy in their generalizations
@@ema7561 the video is about kheer which Is eaten around entire India subcontinent and predates partition. I am aware of the fact the it's been over 70 years since partition and countries within the region have developed and created their own dishes, those dishes I would identify with their respective countries . Chinese and Korean food is very different and they are 2 entirely different civilizations. A correct example would of been Korea as its been split into 2 what do people call Korean food south Korean or North Korean no they just call it Korean yes they have individual variances but the core is the same. Plus biryani is Pakistans national dish but its invented in India hydrebadi being the most popular biryani variant in Pakistan which was also invented in India, please take a history lesson and study cultures with an open mind.
When I was little, my grandma use to make small portions of the rice pudding and write our name using cinnamon spice on top of it; it was most beautiful memory I have of her❤️

Here’s the recipe transcribed: 8 oz basmati rice, rinsed until clear, then soaked for ~20mins (These are volume ounces) 4 cans light coconut milk (or 3 plus 8-12 oz milk) 10 green cardamom pods, seeds removed and ground 4 teaspoons sugar Raisins (if you omit the raisins, add another 1-2 t sugar) Wash the rice, then set it aside to soak. Pour the milk into a large pan on medium low heat. Stir frequently to prevent scorching; heat for ~20 minutes. When the milk reaches a good simmer, drain the rice. Add half the cardamom to the milk. Stir to disperse. Add the drained rice. Stir every 3-5 minutes for approx 20-30 mins. [Do not rush the cooking, or you will scorch the milk and maybe even rice. Just keep stirring. The longer you cook it, the more the milk will reduce, the more starches will be released from the rice, so the thicker it will get.] When the rice is cooked, add the remaining cardamom, sugar and raisins. (Raisins can be added at serving, but they will not absorb the milk and plump up.). Cook for approx 5 more minutes or until desired consistency.

Love your take on kheer. Just a suggestion, add 1tsp of saffron to the milk while it's still boiling (if you want) it's game changing. It will make the kheer so aromatic and will enhance the taste too. Love from India ❤️
I guess this is one of those foods that kind of spans cultures, because the only differences between this and my family's rice pudding recipe is that you're using coconut milk instead of whole milk and cardamom instead of cinnamon, nutmeg, allspice, and clove. I guess the rice is also different, but that's just because we always use whichever rice is cheapest or the last remnants of a couple of different ones, whatever we have on hand. I even make it with brown rice sometimes for a heartier texture and a more nutty flavor.

Thanks for the idea of using coconut milk. I will try it the next time I make Khmer. I just made it with regular milk this week, but that one is a big thick and heavy for me. So from now on, coconut milk is the way to go. Thanks again!

A funny story that comes to mind, In the south of India, we use vermicelli (ultra thin noodle like things) more often than rice. Its known as Payasam. A friend of mine, he wanted to make payasam one day for us, just randomly, BUT he forgot to buy the vermicelli and hence ended up using spaghetti noodles. Now the difference is, when vermicelle is used, a lot of liquid remains, and thats how its kind of supposed to be. But since he used spaghetti, it ended up soaking the entire liquid and became so dry. Lol. Kinda tasted like a very weird pasta dish.
This is also like Mexican or Latin American rice pudding (arroz con leche) the original is same ingredients except you use cinnamon instead of cardamom. We also make a chocolate one and a coconut one. Which I know in Polynesian culture they do chocolate + coconut together.
I really appreciate that you called it an Indian dish. Often people take things like saris and paneer and other things and say they are from other cultures but it is really nice of you to acknowledge it ad an Indian dish because it is.❤

In Greece and Cyprus we also have a version of it, called rizógalo. Its usually more thick and plain in taste and we add cinnamon on top, but I'd be interested in exploring more versions of this!
