Kinamatisang Isda in English is Fish cooked with Tomatoes. This dish is otherwise known as "Pinangat", a Filipino dish which originated in Southern Tagalog (Luzon).
The fish is cook with alot of Tomatoes which serves as main source of natural sour juice, and calamansi or lemon, or any of Kamias, Tamarind can be use also. Ginger and Onion, with Onion Spring or leeks adds flavor.
