Glucose and KB early interferences ( less than 20 seconds ) and protein late interference ( after 80 seconds ...so we use fix points ( 20 and 80 sec ) to avoid this interferences

thank you so much sir ,i think its not just arts ,songs and movies that make the ppl come on one plateform but also the education and knowledge ,much appreciation from pakistan ...i want to ask a question ,infact its a confusion ,over kinetic chemistry ,plz reply if its possible ,and i apologize in advance if my question sounds stupid ,.here you explained that in kinetic chemistry the reaction still continuouse ,but in end point chemistry ,it stops ,we all know that enzymes only react till there is a substarte to react with ,..so there must be some end point for kinetic method too ,then why we take readings repeatdly ,why dont we take it as end point in the end when all the substrates are being used ,....if we take it that way ,it looks like as if we are estimating the ENZYME ACTIVITY in given time period rather than ESTIMATING THE QUANTITY of enzyme .....please reply as this concept is bothering me a lot ...thanks ones again ....
