King Crab in Coconut Milk Recipe
Ingredients:
• 1 kg King Crab (cleaned and cut into pieces)
• 2 cups coconut milk (fresh or canned)
• 1 cup coconut cream (optional for a richer dish)
• 1 medium onion, chopped
• 4 cloves garlic, minced
• 1 thumb-sized ginger, sliced into thin strips
• 2-3 green chilies (siling haba), sliced (optional for heat)
• 2 tablespoons fish sauce or salt to taste
• 1 tablespoon cooking oil
• 1 bunch spinach or malunggay leaves (optional)
• 1 teaspoon black pepper
• 1 teaspoon sugar (optional)
• 1 cup water (adjust as needed)

Instructions:
1. Preparation:
• Clean and cut the king crab into manageable pieces. Set aside.
• If using fresh coconut milk, extract the milk from the grated coconut by adding a small amount of warm water and squeezing it. Separate the first extraction (coconut cream) from the second extraction (coconut milk).
2. Sautéing:
• Heat the cooking oil in a large pan or wok over medium heat.
• Sauté the garlic, onion, and ginger until fragrant and the onions are translucent.
3. Cooking the Crab:
• Add the king crab pieces to the pan and stir to coat with the sautéed mixture.
• Pour in the coconut milk and bring the mixture to a gentle boil. Add water if needed to ensure the crab is mostly submerged.
• Lower the heat and let it simmer for about 10-15 minutes until the crab is cooked through and the sauce thickens slightly.
4. Seasoning:
• Add the fish sauce (or salt), black pepper, and sugar (if using) to taste. Stir well.
• If you prefer a richer sauce, add the coconut cream and let it simmer for an additional 5 minutes.
5. Adding Greens:
• If using spinach or malunggay leaves, add them to the dish in the last 2-3 minutes of cooking. Cook just until the leaves are wilted.
6. Finishing Touches:
• Adjust the seasoning if necessary. You may also add the sliced green chilies if you want extra heat.
• Remove from heat and let it rest for a few minutes to allow the flavors to meld.
7. Serve:
• Serve the king crab in coconut milk hot, with steamed rice on the side.
