I love seeing your videos. All of them are educational. Your knife should only be as sharp as it needs to be to cut the foods that they need to cut. Serrated knives do the trick for tricky foods such as tomatoes and meats easier than sharp flat bladed knives. When I need a knife for cooking, I use a very large one do that you can guide your fingers better.
