This product review is of a whetstone that has been out for a little while. We are super excited to present to you this review. The product is sold as a synthetic stone that simulates the natural stone feel. This was our first time with this product. Experience it with us. We sharpened two knives. I’m researching knives and stones. I’m a retired, lifelong pro chef, but always used German blades and Global. The typical stones used were triple stone oil stones. Nothing elegant or sweet about the art of sharpening there! So, I’ve got lots to learn. I came across your channel after researching Morihei which a very good shop here in Thailand has on offer. I think you opened my eyes to a great world of good stuff I must learn. Thank you. I’ll definitely look at more of your vdo to bone up on the jargon used and technique. Your technique is smooth. I tried to follow closely the blade placements pushing and drawing and for the edge leading you did. I need to get all the kit for sharpening and get myself set up in my shop to do it right. Hi Greg, I have tested my Morihei Karasu 9000. It's a blast. It works fine in combination with the green brick of joy. I resharpend my black damascus SG2 Gyuto from Kato San and my Rycky KS-Style 240 blue #2 Gyuto. With great result. The Morihei stone is a great finisher. I don't think, that I personally need something above. 9000# is more than enough for me. Before you ask - yes I am a patient guy (start on the 2000#) and I don't see the need to progress through all the different grids. Off course I finished on leather with compound on. And I uese different naguras (Naniwa 3000 and Morihei extra fine) on the stones. Also tested the green brick of joy only on a Yu Kurosaki Raijin 210 gyuto with cobalt special steel. And I was surprised how good it worked. Only the 2000# and finished on leather was amazing. I want to try out different finishes for different purposes in the kitchen. To get the optimal results for the ingredients with the different knives in my collection. Makes more fun to switch knives during the cooking process!

Thank you for the review, been trying to find more information on these whetstones! How have they held up so far compared to your current whetstone collection? Would you do a video in the future where you would thin knives and polish to a high contrast between the jacket steel and core steel on your whetstones?

I would say yes but I'd also say I don't get to use them all the time because I have so many to choose from. They're softer than other stones but they feel amazing. They're a nice mix of soft and aggressive. Really good for polishing. Do you feel like you're driving a Porsche. You just feel like it's something special.

It's like none of the other ones. It is hard like a 12,000 grit. It definitely feels like a natural stone. All of them do. I know others who have bought it since this video and they have said the same thing.

I hone straight razors principally but also knives rarely. I set the bevel on 4000 debado Ld and on a Shapton 4000 to my razor! And the cutting edge was smother on the Debado! Ld Have never tried the serie Debado! I think is better than natural stones and hard to win! Also for Shapton and Naniwa🎉 Only defect you have to remove their horrible edges!

Thank you for that. Very helpful. I need to apologize for taking so long. I've had a surgery on my knee and some other things going on. We've had the court case for my car accident. We had to deal with that as well. We've also had some other major things happening personally. Deaths in the family and lots of arrangements to be made. Also, I'll let you know that I will be having another major surgery in June and will not be making it to the Blade show. I will be out of work for two weeks because I'm having all the extra skin cut off of my body. We do apologize for an interruption of videos if it were to happen. Have you tried the morihei 8000 grit whetstone was interested in getting a fine polishing stone and was wondering if I should get the 8000 or the 9000 version

I have them both. The 9000 is very unique. It definitely is more like a natural stone than any of them. They both feel like natural stones. They have a soft this to them but the 9000 it's just a little harder and a little glassier, which is what you would expect from a 9000. It feels redundant to have them both but I do. I don't know if I would just jump to the 9000 it just seems more like a finisher. The 8000 has a significantly softer feel in comparison.

I looked at the Hirohito link. $145 CDN + $30 US shipping. I have an 8k Imanishi stone already, but if I hadn’t I would consider getting one of these. The sizes on these look nice and generous. Nothing much annoying than when they cut corners with the size.

@@trappenweisseguy27 Yes sir! I'm going to be purchasing that stone and doing a review. I'm going to get their 1K and their 6K as well as the 8K. I'm looking forward to doing a review on the entire collection. These are gorgeous stones. They do emulate a natural stone. They are very fun to use and it seems very prestigious to have them. The carbon knife company website seems to have better prices when they have them in.

This is a really great line. The 9000 is something else. It just has that feeling of natural stone mixed in with it. If you got anything it should be that one. I do also think that you can polish a knife with the stones. They get muddy very easily. I like them a lot

I saw a finnish guy pick the 9k out when comparing a bunch of stones and he loved it. So do I, it's an amazing stone, great on all counts. Trying to decide if I want the 1k and 4k, you give thumbs up on the 4k, what about the 1k James, did that wstone measure up to the 4k?

the great thing about morihei hi is that they also leave awesome kasumi finishes. the 1000 already leave a very bright hazy one. its an awesome stone at the end

Can you use naniwa 600 nagura to make slurry on 500 to 1000 stone and then morihei naguras fine and extra fine on high grits? For example?

I think these are a little softer. Bester is also known by different names. That brand does make the Kitayama and Arashiyama. I think those two stones or maybe a little softer or there even in their softness. I still think that natural stones, depending on the stone, I have just a different feeling. They are all very similar. I just think natural stones are just a little bit different. If you use natural stones and you know what I'm talking about. I do think that these are about as close to them as you could ever possibly get. And that was the goal of this company which was to emulate a natural stone even though it's synthetically made. I don't think you can get any closer than this

So, like you I'm sure, I have a knife/stone problem. I now have the 1k and 3k of these and while I like them, I'm not sure they hit the mark. They do have more of a natural stone feel, but at the same time they don't feel like natural stones. Natural stones have a snap to them that you just can't replicate. That leaves them in the synthetic, splash and go category where I think they're fine but nothing great. Personally, I prefer the feel of soaking synthetic stones, but still I think the classics like a Chosera 800/3k setup is better than these. I'm partial to the Shapton glass 4k, so I also think it's a better stone. I'll have to buy the 9k to try but I just think these stones are good but nothing crazy good.

The 9K is just completely different. It definitely has the natural stone feel. I do like a soft stone with a little bit of mightiness. The results don't lie, a lot of the synthetic stone just perform extremely well even though they're not soft. I continue to enjoy the experience I have with all of these stones

I guess the Naniwa Pro 3k and the Morihei 4k would be a great battle. Naniwas are usually a bit finer than other brands in the same grit rating.

I consider the price of the stone not important cause the stone in home use will last me a lifetime and 100$ of 85$ or 110$ makes no difference... Performance and feel of the stone are the only deciding factor.. Unfortunatelly i dont have Morihei in the country where i live but i dont think its any different than ussual high end stones like Chosera, Shapton Glass and Suehiro Ouka , Rika, Junpaku that are absolutely unbeatable in joy of sharpening... But dont doubt that Morihei are great since everyone is praising them🙏

If you like the markings on the stone why don't you flip it over and sharpen on the unmarked side . I am mostly asking because I have been using the backside of all my stones and have yet to notice anyone else doing this. Just wondering if I am doing something wrong, bad juju or something. I too appreciate the markings.

So I have one and I have use it for several projects. I could definitely maybe try to learn to do that for you. It’s not something that’s easily done where we are because I’m not on a laptop. I would have to shoot it separately and splice it in. It’s very hard to get some of the details. Depending on the quality other one you got. I will definitely try for you

Absolutely love them. They’re a little soft. They just kinda have something about them. I think they’re like a Porsche. They really are amazing. You could polish with them and you can get good mud with them and they feel good and they great results. I’m super happy to own them.
