Another tutorial was using vinegar and boiling water. I was a bit skeptical. Thanks for your perspective on the best way.

I've tried many many different ways of cleaning and I have to say, I don't like using soap or anything like that at all. I'll just put a super small dash of (and here I am with this) 5% apple cider vinegar on the bottom of my jar and then fill up the jar with hot water, clean it and rinse it probably 10 more times (just to make sure the vinegar is really gone). I've never had problems with this and my kombucha doesn't taste like vinegar at all :D

I love how you get straight into the information. When putting in the flavours how much would you recommend? For example would a teaspoon of turmeric and a teaspoon of ginger be enough for a litre of kombucha? Can I put in apple and cinnamon?

It depends on the flavorings, but I generally advise around 1/4 cup of fruit juice/puree per 16 oz. bottle of kombucha. For herbs and spices, it's really dependent on the potency of the herb/spice and your taste preference so you'll have to do trial and error. I have done apple juice and a cinnamon stick in my bottles before, and it was lovely! Scoby bottle moldy, how should I wash it?

hey i live in an area with 40 degree celsius late morning / afternoon I'm doing my second brew where I did not turn the ac on as I did in the first brew. I noticed some bubbling on the scoby and the smell does not seem pleasant I did taste it it did not taste bad at all. Also, the kombucha does not look as clear as the first one. p.s I did change the tea I used but the main concern is the temperature should I get bach to the same method I used on the first brew?

Hey there -- that seems like a really high temperature that could cause over-acidification. Or it may just cause your brews to ferment too fast. But as long as you like how it tastes, that's really the ultimate test. If you still like the taste, then you can keep going with how you're currently doing it.

Hello! I just got a scoby and I am a little bit confused. Some people say you shouldn't touch your scoby after washing your hands with soap. How should I wash my hands tho?

You can totally touch your scoby after washing your hands with soap. Just make sure to rinse well so you're not transferring soap onto your scoby when you touch it. :)

Hi! I just joined the booch brewing crew! I have a newbie dummy question... I have a continuous brew vessel and in the instructions it says not to use hot water because it might shatter the vessel. However everyone says to wash with hot water so I'm a little confused. Maybe they mean boiling water? I dunno. This was a gift and I would hate to report back and say "I wrecked this amazing kit you got me" 😅

Annie J this might be too late but the mean have a cold vessel and the pouring boiling or very hot water into to it all at once. If you do this it will shock the glass and cause it to shatter. So you can use warm water or heat up the vessel to get it used to the hotness. Hope this helped!

I just had to pour out all my Kombucha because it had black/white mould. My poor Scoby! It was given as a gift and was huge. SAD!

I sterilise my bottles every time before I brew, with boiling water for ~20 mins. Do you think this is overkill? I'm surprised that you haven't had any problems with just warm water and soap.

Sterliziation isn't necessary for kombucha, but if you're a fan of it, do what you gotta do. I've never run into issues because the yeast/bacteria ratio and pH make it really inhospitable to mold and harmful pathogens as long as it's brewed properly.

I heard that dish soap kills bacteria and in turn imbalances the scoby... Thoughts?

Garland Thompson Agree - all soap really has the potential to create an imbalance, but I’ve found dish soap to be the mildest (and food-safe) and most effective at removing stuck-on fruit pulp/residue. I always rinse super super thoroughly and dry completely before using my bottles/materials so the soap never comes in contact with the scoby anyhow. 😊

EVERY VIDEO AND WEBSITE SAYS SOMETHING DIFFERENT. >:( Use soap, don't use soap, wash your hands with vinegar, don't! Jebus I'm so confused

I recommend following the advice of the source you trust the most. You're totally right that there's a lot of conflicting info about kombucha out there, and it definitely frustrated me when I was first doing research about kombucha too. That's what I hoped to clarify by creating my website + RU-vid channel. Good luck :)

Do not follow her advice on cleaning if you want successful brews. Do not use soap! Do not use bleach! Use PBR to clean off residue and use Star San to sanitize. You must sanitize for a superior product. Dish soap will leave residue that will adversely affect your ferment, never use it. Although it is true that kombucha isn't as sensitive as beer in the ferment, it is foolish at best to avoid basic sanitation procedures. We're not talking about pathogens, we're talking about quality.

Thanks for this comment, I was worried because I am on my first batch, and I just took a clean vessel, swirled some star San I it and rinsed with water, then added hot sweet tea and let cool. Then added starter liquid, then scoby. My scoby sank though so I am still worried

I agree. Soap will leave a residue, vinegar will not if rinsed thoroughly.
