I used this method with the third fermentation to removed fruit pulp 2 weeks ago and the result was great. The second fermentation was 2 days and the third fermentation was 2 days. I added 1/4 teaspoons of sugar per bottle for the third fermentation. I have used her method with 2 fermentations only and got the same result with pulp. Those who are experiencing explosions may be adding too much sugar or fruit or juice feeding the yeast.

love the videos :) but yes after only 2 days and a half of the 2nd fermentation, a bottle exploded. I actually bought kombucha bottles.

As she said in the video, it does also depend on what flavorings you added for the second fermentation. Some things will ferment quickly and get out of control. Personally, I burp, not so much to release pressure, but also to check the pressure.

Wow. My 2nd ferment lasts 1.5 days. Then again it's pretty warm in my apartment.

For the specialty bottles, I buy from a local wholesaler in Los Angeles, but I recommend finding one in your area if possible, so you can save on shipping costs. I go into more detail in that link. :) But if that doesn't work, you can also do an online search for "wholesale specialty bottles"

I tried brewing kombucha for the first time and had an explosion from not burping my kombucha. I used California Home Goods swing top bottles. I burped one bottle, and didn't burp the other. The one that I didn't burp exploded and ruined my carpet. Two days into the second fermentation and then BOOM! I wish I had burped both bottles :(

Thank you for this info. Googling bottle carbonation leads to a lot of reddit results with a lot of people claiming that doing any sort of sealed fermentation stage in glass bottles is a guaranteed catastrophe. I have good, thick swing-top bottles I got from my local brewing supply store. I'll put them in an empty cooler like you suggested in the blog post, and I wont worry about it.

In beer making secondary fermentation is carefully measured to avoid over carbonation and exploding bottles. If you add too much priming sugar into secondary fermentation your bottles might explode.

Konrad a Totally. I dabble a bit in beer brewing as well. Kombucha brewing is a little more unpredictable because the unique makeup of yeasts and bacteria in the scoby aren’t as easily/specifically measured as the yeast we use in beer.

I have made the following experience ... to share. The fountain of stuff jetting out of the top of the bottle is caused by the CO2 tiny bubbles rising, taking fruit stuff along on the way up, and propelling it out at the top. So what do I do: I open the bottle, and still before the gas starts to rise inside the bottle, immediately turn the bottle 90 degrees, so to pour Kambucha out of the bottle into a glass. By doing this, I have no "fountain" and I have still all the carbonated drink. It takes some practicing, but just watch when you open the cover. It takes 1 to 3 seconds till the "gas flares up" ... and you need to pour the Kambucha already at the time this process starts. Then nothing will happen. If you are "too slow" you either quickly close again or ... hahaha have a big towel ready. This just to share my way, how I open my bottles, which by the way, I do not burp, but I do my second fermentation just 2 to 3 days.

I look at the bottle with a flashlight... when tiny bubbles run up the side, it is fuzzed when it is doing that.

Good idea ... I have these bubbles running up already in the first fermentation. I use 90g sugar per liter of black tea and bubbles start to run after something like 30 to 40 hours ... so even the first fermentation is fizzy already

Ok so not sure if I did something wrong but I did a second ferment with watermelon. And on the second day it exploded. I have the same kind of bottle you have sitting to the far right! It was one freaking mess

I’ve been brewing kombucha for about 10 years and I’ve always used what I thought were good (clear) bottles with flip tops and I’ve had a few explode on me. When they blow, you better pray their in a closet or somewhere contained, because the glass will fly and it’s quite a mess.

brewed my first batch. didnt burp any bottles. AMAZING FIZZ! I've never had kombucha so fizzy and effervescent. It was like soda! I stored them in the GT bottles and no explosion.

I always chill mine and it always fizzes under too much pressure after 2nd fermentation. So I was thinking of burping.

How do I take big chunks of fruit out of my bottles? How do I clean my bottles? Can you make a video on that? I have bottles that I can't clean, that have pieces of fruito glued on the internal wall? I bought a baby bottle cleaner but even with that II can't get a perfect clean.

I like my kombucha to be very fizzy too. However If i dont burp my bottles - I cant open the bottle without getting the kombucha everywhere. It simply isn't possible. My bottles are very high quality and I'm not at all worried about the glass breaking. Even burping and chilling it still takes several attempts of releasing the gas before I can open and keep the contents mostly inside.

When I make a batch of kombucha I have one bottle of kombucha in an old plastic soda bottle (the kind that comes in those 6 packs) wiyh about the same amount of air space as the others and I squeeze it every day. Once it's very firm and I cant squeeze it very much I put the batch of glass bottles and the soda bottle in the fridge

Thank you very much for your vídeos! They are the best material I could find! I just recently started brewing. I'm on my second brew and tonight a bottle exploded inside my kitchen cabinet while I was away. I bottled the kombucha along with the fruit yesterday night (less than 24h ago!). I used tangerine, ginger and added just a little spoon of white sugar to get an extra fizz. Do you think the fruit (amount of acid) or the sugar had something to do with it? Or it was mostly because, as you said, I probably didn't use the right kind of bottle? Mine looks pretty much like the one you have on your right with the flip top.. Greetings from Brazil!

Yikes! I'm sorry to hear that. 24 hours is really quick to build up that much carbonation to break a bottle! Sugar content greatly affects how carbonation builds up. The more sugar = the faster and more likelihood carbonation will build. Temperature also matters -- bottles ferment a lot faster in warmer temperatures, so that could also affect your fermentation time. There are unfortunately also a lot of thin-glass, poor quality flip-top bottles out there on the market, so even if they look the same, the quality may not always be equal. So, you could have a few potential solutions. Try using less sugar -- if the first ferment and the fruit is sweet enough, you may not need the extra spoon of white sugar per bottle. You could also adjust your fermentation time -- and chill them before 24 hours if it's hot where you live and you find that it doesn't take very long to build fizz. You could also try out different, thicker glass bottles to see if that's a better alternative. Thanks for watching! I hope that helps.

You Brew Kombucha, maybe I had too much sugar, it is warm about 75 degrees in the house.....first time working with Kombucha. I went ahead and transferred all the other bottles in the fridge to stop the fermentation process. ....

@@angelcruz8576 I use IKEA bottles and have no problems with them, the 1/2 Liter and the 1 Liter bottles. I use blended super-ripe fruits like Mango etc for the second fermentation, but just 2 tablespoon full per 1/2 Liter. And I find the taste is great after 2, max 3 days of second fermentation at the 30 degC we have at our place. I do not burp the bottles, but I keep them inside a container ... just in case ;)

With that bottle definitely. Otherwise it explode on ur face or really explode. Once I got home and my fridge was dirty snd full of glass peaces. And it was a good quality bottle.

I am looking today to find how "violently" bottles "explode"? Do they blow up like a granade or do they just crack and leak? Because in the course of the second fermentation, I do take bottle by bottle and shake them up to mix the fruit matter again nicely with the Kombucha ... and today I thought ...if a bottle would during this shake-up violently explode, then I could be in serious troubles (and better do it with safety glasses on and gloves on). I had so far no bottle broken, I do not burp, so I still have to see. I saw some pictures of people who describe the explosion as quite violent. Anybody to share her/his experience on the "explosion" ?

Oh it’s violent... mine exploded into a thousand pieces and even punctured holes into soda cans next to it. I was using square flip top bottles, too much presssure built up in the corners..

Alright, I need to figure out what the heck is happening with your kombucha that is apparently different to mine. Yesterday, I started a second fermentation. I had 4 bottles (flip top cap kind). They were food grade. Girl, one of mine exploded in less than 24 hours!!! I was going to burp them even though you said not too. It was a bit warmer here yesterday so perhaps that sped up the fermentation. Question, do you keep yours at a certain temperature?

:/ Maybe your kombucha culture is super strong! :) You may just have to adjust your fermentation time to refrigerate sooner. Or it may be the bottles. Just because they're food-grade, doesn't mean they're pressure-rated. Yeah, I've heard of too many IKEA bottle explosions from other homebrewers, that I just tell people to stay away from them. I just blended some victoria grwpes and flavored with them, you get lots of pulp which you can just drain out but i left mine in

hey, my kombucha goes crazy after second fermentation. it gets over cabonated just in 3 days. when i open the bottle, half of the bottle spouts out like a geyser :-) and the rest goes flat not fizzy :-( how can i prevent this?

You'll likely just have to refrigerate your batches sooner. Everyone's cultures and variables are all different from each other so yours may just ferment at a different timeline than mine :)

This is the first time I’m brewing kombucha and I think I’m just so fascinated by it that I can’t stop burping it everyday HELP ME !!! It’s day 349 and the little fucker drinks gallons of baby formula, and I just feel like a horrible mother if I don’t burp em. my pockets are all dried out😞 i don’t think I can do this by myself... baby daddy’s ain’t shit
