I'm just about to start my second brew, your videos have been by far the most reliable and accessible source of information I have found. Keep up the good work!

I just searched your channel for Blueberries. I couldn't find any video where you recommend second fermenting with whole blueberries. That is possibly my favorite thing to do with home brewed kombucha. They don't add a ton of flavor so you have to combine them with other fruit juices. What's awesome is the ferment causes them to fill up with CO2 and they float at the top of your drink. When you bite into them they burst in your mouth like no blueberry you have ever had. I compare the experience to Boba Tea, where the oversize tapioca pearls are less about flavor and more about the fun drink experience. Personally I think the bursting Blueberries are more fun then tapioca pearls, also more nutritious!

Your channel and book has been really helpful. I use this book for kombucha, but also for milk and water kefir and sauerkraut. Thank you for demystifying the fermentation process overall. Your videos on Kombucha are the BEST out there hands down. Thank you so very much for sharing your knowledge and passion and sticking to the facts!

I'm a newbie kombucha brewer and 61. I really enjoy your video's. But I do have to admit I found your channel but accident. I'm glad I did. I started my own scoby 10 days ago and it's going great. So, thank you for doing your channel, and I'm getting your book. :)

Have you ever attempted to measure the sugar content in your finished kombucha? If so, how do you recommend measuring? I'd like to see how much sugar my finished product has vs store bought kombucha. Thanks so much for sharing all your wisdom and experience! You're channel is a great resource!

Hi I'm new to your channel and I'm enjoying being able to learn from you. Thank you for doing what you do. I am learning to brew kombucha. I successfully grew my first SCOBY. And I'm serious I could have used it to brew my first batch of kombucha by the end of the second week, but I waited one more week. My home stays quite warm. My comfortable temp is about 73 74 degrees, and in the summer months the temp can get up to 80 degrees. I brewed a batch of tea yesterday and in 24 hours I already have a very thin layer of SCOBY forming in top. You can see it if you look from underneath. How soon should I start testing the flavor to see if it's ready? Thanks 😊

Thank you so much for all your guidance. I found something cool this morning and have a question. Last year I put my lemon remains after squeezing out the juice into so ACV to use as a cleaner. I haven’t opened it in several months. This morning I pulled it out of the cabinet and saw that there is a beautiful scoby on top. Can I use this to make kombucha?

Just thought that I would mention that a couple of months ago my Kombucha stopped fermenting. Instead of taking about ten days to be ready, after three weeks it still was not done. Long story short, I realized that with winter coming my basement was colder, so my fermenter was probably dropping below what the Kombucha was capable of. I got a heat wrap and things are again on a 10 day schedule. You may wish to consider mentioning this at some point, as I do not remember it being covered in a previous video.

I have been brewing great tasting kombuchas so far. I know salt affects the yeast activity but I'm more interested to know whether salt kills the good gut bacteria in F2?

01:08 based on your videos - there might be some love of scientific method - but there's not much scientific method. You eyeball the whole thing. :) You quite often repeat information that is scientifically incorrect (mostly about the sugar and cellulose). There's a lot of experience, some experiments, but not much science in here. This channel is absolutely great for begginers. It gives a lot practical advice on how to brew. But it definietly does not deliver science.

Because of the high volume of questions and emails I get from folks, I’m unfortunately not able to get to everyone’s specific questions and provide one-on-one consultations with everyone. My hope with providing all these free videos and resources on my channel/website was to enable people to find answers to frequently asked questions 🤗 if I don’t answer someone’s comment, it’s usually because the answer is already posted somewhere on my website/channel
