Rice noodles and chicken curry is a signature dish of Mangalore
It's one of the best combinations .
INGREDIENTS --
8 spoons ghee 4 spoon coconut oil
4 onions
10 cloves of garlic
1 spoon black pepper
4 spoon coriander seeds
2.5 spoon jeera
3/4 spoon turmaric powder
1/2 spoon fried methi
6 fried spicy red chillies & 30 fried kashmiri chillies
2kg chicken
salt
coconut milk
1kg white boiled rice
PROCEDURE--
Add 4 spoons ghee to a tava
add a onion
add garlic pepper coriander seeds 2 spoon jeera
fry all of them together
Off the flame
add 1/2 spoon turmaric powder
methi 1/2 spoon 1/2 spoon raw jeera
add the chillies
let it cool
finely grind in a grinder
add a pinch of tamarind sour and grind
heat a vessel add 3 spoon ghee and 4 spoon coconut oil
add 1.5 chopped onions
1/4 spoon turmaric powder
add the chicken and mix
add salt
add 1.5 chopped onions
cook for 10 mins
add the masala paste
add 1/2 glass of water
cook for 10 min
add coconut milk
heat it to a boil
CHICKEN CURRY IS READY
rice soaked in water for 6 hrs
add salt and grind
heat it for 5 min
make balls
boil these rice cakes in idli making vessel for 30 min
press these rice cakes through a noodle making machine
SEMIGE IS READY TO EAT
