Korean beef and radish soup (Muguk, 무국)! Quick and easy!

This muguk recipe uses a quick method to make a beef soup base. The soup base can be used to make other soups such as tteokguk (rice cake soup). Muguk is an easy soup to make, but there are a few basics and helpful tips you'll learn in this video.

Ingredients:
12 ounces Korean radish, mu, 무 (you can use more)
1 to 2 scallions
6 ounces beef brisket, chuck, loin, or any other cut (you can use more)
2 teaspoons minced garlic, divided
1 teaspoon sesame oil
2 tablespoons Korean soup soy sauce, guk ganjang, 국간장, divided
salt and pepper to taste

I used to live with my Korean friend for several years and I mostly got the task of cooking. I often cooked Korean food because my friend (he's my best friend actually) always preferred to eat Korean food and I had no problem eating food from whatever country. I am Indonesian by the way. The problem was, apart from the usual staple Korean street food and snacks (tteokbokki, ramyun lol) I didn't know how most Korean (home cooked) food actually tasted. I turned to your website and followed your recipes down to the T and my Korean friend praised me and my 'Korean' cooking lol I tried so many of the recipes from your website (I think I already made Muguk lol) and everything turned out great, my friend always praised them, saying I am good in making Korean food lol He doesn't know that I have a 'teacher' lol Thank you so very much Ms Hyosun, through your recipes I can glimpse and learn about Korean culinary tradition!

I really like radish soup, too, so I eat it often. More than anything, radish, the main ingredient, is easy to get, so you can cook it's

Looks delicious. Always appreciate Korean recipes I can make with ingredients I can get here (we have radish here shockingly, but things like dried anchovies used in so many Korean dishes are not something I can buy).

Thank you! Oh that's too bad, but you can always use different broth if you don't have access to dried anchovies.

I finally made this (they didn’t have radish for a bit, but they had some very nice ones today) and it was delicious. I made it a little differently because I can’t really get nice boneless pieces of meat in this town, so I took the irregular bone in chunks of meat and used the pressure cooker to get them tender. Once the broth was made I pulled the meat and removed the bones and proceeded with the recipe. I hadn’t planned on making this today, but I was able to make it for lunch once I got back home and it was wonderful with a bowl of rice.

I have a very hard time finding the Korean radish. Could you use broth or stock instead of water?

The beef and water creates the broth for this dish, but you can use other broth if you like. Slightly different but you can use any type of white radish if available.

This will be another soup I'll enjoy year round. Simple and tasty. I'm usually partial to Japanese Daikin but the Korea radish is very good. I used steel wool to clean the skin. I added noodles, love noodles in soup. Do you have a seaweed soup or tofu soup recipe?

​@@kristynamoraischavez2274 "everything goes so quick" you know you can pause videos, right? also if you click the gear in the top corner of the screen that appears when you tap on whatever video you're watching you can change the play speed to make it slower(anything below x1 speed will be slower than the normal video speed)

Years ago in Seoul ate this wonderful clear muguk without meat only turnip served cold delicious. Would you have a recipe for this?

Not sure what the soup base was, but you can simply omit the meat or use anchovy broth as base.

Do you make your OWN guk ganjang (국간장)? I've heard from Koreans that it's only good if it's homemade. Just wondering what you think...

Yes I do sometimes. It's made as a by-product of making doenjang.

Fish sauce is great in this soup. Otherwise, simply season with salt with a little bit of regular soy sauce for color.

Yes you can! hmm each will be a different soup and good on its own way. I'd say it's a matter of personal preference, but if you're really torn between the two, try pork. I haven't tried either one.
