Today I made warm, comforting and soothing Korean chicken porridge, dakjuk. This dish will definitely warm your body and soul. It is especially good when you are not feeling well. The chicken broth is made with ginseng, which has many health benefits. This dish is packed with vegetables and soft, chewy sweet rice. I added minced garlic to season the porridge. It really didn’t need any other seasoning. This light meal can be enjoyed any time of the day and any time of the year. I hope you enjoy this dish.
Ingredients:
11 oz boneless, skinless chicken breast
1 ginseng
8 garlic cloves
6 dates
3 green onions
5 cups water
3 oz carrots, finely chopped
3 oz zucchini, finely chopped
3 oz potato, finely chopped
2 oz king oyster mushroom, finely chopped
1 cup sweet rice, prerinsed and presoaked for an hour
Seasoning:
1/2 tbsp salt
1/2 tbsp Korean chili flakes
1 tsp sesame seeds
1/8 tsp black pepper powder
*Adjust consistency of porridge to your taste with extra stock or water.
*used the garlic from soup stock to add to porridge
