Hey Ghanaian here 👋🏾 the brown sauce is called “shitto” yes like “shit” 😂 but with an O at the end. It’s like ketchup, it’s meant for basically everything. You can eat it with the jollof, fish, Yam, banks etc. Also I know shitto is really spicy, some people like a lot, but Until I want my nose to sweat I have to eat it in small quantities 😭I love that you guys are trying other foods ❤️

The shitto is actually made out of seafood. It’s mostly dried granulated shrimp and some type of dried fish as well.

When shito or Ghanaian dishes are made outside Africa, we tend to reduce the heat/chili content to make it easier for others to eat. Ghanaians really like peppers

The brown sauce (shito) is made from fish powder and the red sauce (meko) is basically union,pepper,tomatoes and salt. You can eat both sauces with both the jam and the fish. Thank you for trying Ghanaian food. This is only my third video of you guys and I love all of them! ❤️❤️🌺If your ever going to try Ghanaian food again: please try moetuo and nkate nkwan (ball of soft rice and peanut soup ‘it might sound weird but it is Delicious!’ ). #chimisquad ❤️

Okay your videos are giving me joy. I’m Ghanaian in the diaspora, I was born and raised in Italy but this video reminds me of my mum’s cooking 🥰 Last year I was in ChinaTown in Philly and I kind of realised there are so many similarities with Ghanaian food and some Asian cuisines.

The Biggest difference is Nigerian jellof rice uses white parboiled rice. Ghanaian jollof uses fragranced rice specifically jasmine rice hence why it’s so sticky. Also Ghanian jellof uses a lot more tomatoe paste resulting in the beautiful redness. I love both equally as much. Loved watching this.

Yes this is very true. Ghanaian tend to use more jasmine rice. We don’t really use parboiled rice like that.

That’s not true 😅😅 we make “jollof” with any kind of rice provided it’s to the person eating it’s taste. The main difference is the spicing. We don’t spice same homie! . There’s a special touch to every Jollof you will eat in Ghana . Plus we don’t call it jellof rice we call it “jollof”😅

Jollof is made (onion, ginger, garlic and scotch bonnet/ pepper, tomatoe blended together) cooked before adding beef stock the. The plain rice.. The goat meat is steamed before fried) The sauces red one is just pepper, ginger, garlic,tomatoe and onions blended together Black sauce is same process but with tomatoe purée cooked till it’s turned black, some ppl add dried fish grounded dried shrimp added to give it that perfect taste 😁 love you guys btw ❤️

You guys made my day with this video. Also the spiciness in food ranges from how much pepper the cook puts in that's why its different every time. Sometimes people put too much and it makes it hard to taste the natural flavor but finding the perfect amount really changes the whole palette. Love you guys 💛

Me as a Ghanaian watching y’all tear that platter up: 😌🥰😩🔥 Jollof is a really common dish in Ghana and most of africa. Fun fact: ghana was once called the “gold coast” for self explanatory reasons. The black and red pepper are what i would call condiments. U can eat it with banku, fried yams, fish, etc

I enjoyed this Mukbang because it was obvious that you guys really liked the food. Jollof rice is truly a dish shared by several countries in Africa. But the spice differs per country. We eat fried rice too by the way.

Ingredients Beef 1/2-1 pound boneless beef 3 cloves garlic 1 inch ginger 1/2 green bell pepper scotch bonnet pepper as required (optional) 1/2 onion salt as required. Stew 1/2 cup/120ml oil 3 tablespoon tomato paste/ puree 1 large onion 2 tablespoon turkey berries optional pepper as required 2 large tomatoes chopped 1/2 teaspoon curry powder 1 bay leaf Jollof 2 cups rice 1 1/2 - 2cups water adjust with the brand used salt as required Instructions Prepare beef Cut the beef into desired sizes. Blend all the ingredients under the beef together. Pour over the beef. Put on high heat and cook till is tender. Add water as and when needed when cooking.bBlend onions, turkey berries and pepper together, set aside. Put oil in a saucepan and set on fire. When oil is hot, fry beef and set aside. Add tomato paste, stir fry for about two minutes, add blended onions, pepper and turkey berries. Add chopped tomatoes and stir fry. Add salt, curry and bay leaf. Cover and let simmer on high heat for about five minutes. To make jollof Wash rice till water is cleared. Add washed rice to the stew, leftover beef stock from the cooked beef, water as needed, check and adjust for salt. Cover tightly and bring to boil. Immediately it starts boiling, remove lid, using a thin wooden ladle or a long fork stir from bottom to top. Cover tightly and let simmer on low heat for 10-12 minutes. After the time has lapsed, remove lid, stir again. Stir in beef at this point. Cover tightly and let simmer for 10 more minutes till its well cooked. Serve with coleslaw. Recipe Notes Brands of rice differ, check the amount of water you regularly use to cook regular rice and use less than that for jollof. Remember, we using steam.

Okay so the brown sauce (shito) can be eaten with basically everything The red sauce (mako) is probably meant for the yam and fish (you do not eat it with jollof😂)

HERE IS MY AUNTS JOLLOF RECEPIE ITS SIMPLE AND ALL YOU NEED IS TIME!!! (added my own twist to it though) key points in making jollof are 1. the sauce (if the sauce is tasty, the jollof will be also.) and 2. tasting as you go so don't forget to use your sense of taste to check whether a step is done or not Go to the store and buy these things if needed! get ready for a long day!!! I RECON YOU START THIS EARLY ON IN THE DAY!! GROCIERY LIST -CHOICE OF MEAT (CHICKEN,BEAF,LAMB,ETC) -5 ONIONS -GINGER -GARLIC -FRESH PARSLEY -FRESH THYME -FRESH ROSEMARY -10 TOMATOES (ON THE VINE) -MAGGI CUBES (A PACK EACH OF BEEF AND CHICKEN AND MAYBE SHRIMP IF YOU FIND IT) -CAJUN SEASONING -CURRY SEASONING -ADOBO SEASONING -6 HABANERO PEPPERS -1 (6oz)CAN OF TOMATOE PASTE - DRY BAY LEAVES -JASMINE RICE OK NOW THAT YOU'RE BACK FROM THE STORE LETS GET COOKING! STEP 1: Pick a choice of meat and pot it in a pot(we usually use beef of chicken but go crazy! No fish though cause it'll fall apart). You're gonna boil the meat in a marinade for about 15 minutes of until its cooked through. PREP!! CHOP THE PRODUCE AS NEEDED BUT YOU'RE GONNA BE BLENDIND THEM SO IT DEPENDS ON YOUR BLENDER. MEAT MARINADE BLEND -2 onions - fresh parsley -fresh thyme -fresh rosemary -2 maggi cubes (1 chicken and 1 beef flavor. If you can find shrimp use that too) -Thumb size ginger -3 cloves of garlic -Cajun seasoning -Adobo seasoning (the yellow one)(it has salt and so does Cajun so you can skip salt) -3 habanero peppers (blend and set aside) ONION BLEND -3 onions -6 garlic cloves -thumb size ginger -3 habanero peppers -some water to move the blades. (blend it and set aside) TOMATOE BLEND -7 tomatoes on the vine with a bit of water to move the blades. (blend this and set it aside) SPICE MIX IN A SMALL ZIPLOCK BAG DROP -2 of each maggi cube -1 tbsp of adobo -a bit of chopped fresh parsley -1/2 tbsp black pepper -2 tbsp curry powder - 1/2 tbsp garlic powder crush maggi cubes and shake together and set aside STEP 2: Blend the marinade ingredients with only enough water to move the blades after the marinade is blended pour it over your meat, stir, and cook the meat in the marinade. THROW A FEW BAY LEAVES INTO THE POT AFTER YOU'VE POURED IN THE MARINADE. ABOUT 2-3. STEP 3: after the meat is cooked you can choose to do one of 2 things. if your choice of meat was chicken and you want a healthier choice you can bake it in the oven over parchment at 350 until it's browned. You can also fry it but usually we bake our chicken. If you choose to fry whatever your choice of meat was, you can use that oil for the next step. This is the second stage of building flavor for the jollof after the meat broth. if and when you fry your meat all you have to do is throw it in the HOT oil. DO NOT COAT IT WITH BREADING OR FLOUR!!! STEP 4: In this step you're gonna fry off the "ONION BLEND" . Now if you fried the meat use the same oil for this step. If you didn't fry the meat pour some oil (veggie or canola) into a fairly big pot and heat it up till its hot. Pour in all of the "ONION BLEND" and fry it for 10-15 minutes stirring frequently until its caramelized/browned. if it looks like it needs more oil then add it! FRY IT ON MEDIUM HEAT!! STEP 5: after the onion blend is caramelized add the 6oz can of tomato paste and stir in oil. fry this down until the sauce turns a deep red color or until tomatoey taste is gone. about 10 mins or longer if needed. STAY BY THE FIRE FOR THIS WHOLE STEP BECAUSE THE TOMATO PASTE BURNS EASILY!!!! STIR CONSTANTLY!! STEP 6: after cooking off the tomato paste add in all of your "TOMATO BLEND" and a scoop or 2 of the "SPICE MIX". DONT ADD THE WHOLE SPICE MIX BECAUSE WE STILL HAVE TO ADD THE MEAT BROTH WHICH IS WELL SEASONED AS WELL. This step will take the longest because the tomatoes need to cook all the way down AND THICKEN until it doesn't taste like fresh tomatoes. cook in 20 minute intervals then taste after each interval to see whether its done. IT MAY TAKE OVER 45 MINUTES BUT TASTE IT. IT WILL TASTE DONE WHEN ITS DONE. STEP 7: After the tomato sauce is cooked all the way through, add in all the meat broth and taste for seasoning. If it tastes like it needs more then add in the "SPICE MIX" MIT BY BIT UNTIL YOURE SURE THE SALT AND FLAVOUR CONTENT IS RIGHT. save 3 cups of the sauce to the side to drizzle over rice if it later needs more liquid to cook. STEP 8: Now it's time to add the rice. THIS IS THE TRICKIEST PART OF JOLLOF. you don't wanna add too much or too little. add about 3 cups of rice to start then stir. you want to keep adding gradually until stirring becomes a bit hard but you can also see the sauce. remember if you add a little too much you can add the sauce you saved from step 7 to balance it out. overall, eyeball it. HERE IS SOMETHING THAT MAY HELP WITH THIS STEP click on this link @ and skip the video to the @ mark. this is what it should look like when you add your rice STEP 9: I know you're tired by now with this and it may seem complex but you can do it!! we are almost done. in this step you want to cover the pot with the lid for about 5 minutes. after 5 minutes carefully stir the rice from the bottom up to make sure every grain gets a chance to cook. after this last stir, cover the top of the pot with aluminum foil/ parchment paper followed by the lid and cook for about 30-60 mins or till the rice is fully cooked. during this step you can take breaks cause it might actually be the longest step haha. youll know its done or almost done when oil rises to the top of the sauce. STEP 10: CONGRAGULATIONS YOURE DONE AND NOW YOU CAN ENJOY THE JOLLOF!!!! I HOPE THIS HELPED AND I HOPE SOMEONE ACTUALLY TRIES THIS RECEPIE ESPECIALLY OUR LOVELY SISTERS HERE PROVIDING US WITH INTERESTING MUKBANGS! I LOVE YOU GUYS AND HOPE YOU TRY MORE GHANAIN FOODS!!!!!!!!!!!!!

Awesome! The yams can go with both the shito and the the ground pepper (called meko). I like to mix the two and even cut some tomatoes and onions on the side. Shito can go with almost every savoury food we eat, except those we eat with soup. Meko and shito are like best friends and where one is called for, the other is most often present. They are also interchangeable in most dishes (ie, if you don't have shito, meko will probably do and vice versa).

Jollof is a food that takes a lot of time and processes to make and also a lot of other ingredients but all the time and effort pays off at the end. Korean foods are tasty but are mostly fast and easy to make if you know the recipe and procedures in making it.

Come to Ghana you would love it! The yam goes with the tilapia fish and both sauces. The jolof with the shito can also sing together. I just like the way you guys seem very well read and know a bit about other cultures it’s very lovely of you. Ghanaians typically like stickier rice (compared to like Nigeria where par-boiled separated rice is preferred. Nothing wrong, all delicious), probably because we trade with Asia for rice often. I love the first scoops of jollof in the pot once it's made because the rice sticky

Okay girls.....well done trying Ghanaian food. I’m a Ghanaian myself and I’m also a foodie. So the red pepper goes with fish and the yam, and the black sauce which is made with dry shrimp and fish usually goes with the jollof you can mix the black sauce with the red pepper sauce for a better taste. And yes! Ghana is #1 cocoa bean exporter. 🙏🙏

Preparation Add onions and 2 tablespoons of oil to a blender and pulse until smooth. Transfer to a medium bowl. Add the diced tomatoes, tomato paste, and habanero pepper to the blender, and pulse until smooth. Transfer to a separate medium bowl. Heat the remaining ⅓ cup (80 ml) of oil in a large, heavy-bottomed pot over medium heat. Once the oil is shimmering, add the onion puree and cook until the water has cooked out and the puree is starting to brown, about 10 minutes. Stir in the tomato puree and add the curry powder, garlic powder, ginger, dried herbs, and crushed bouillon cubes. Cook for 20-30 minutes, stirring occasionally, until the stew has reduced by half and is deep red in color. Add the rice, mixed vegetables, and water. Bring to a boil, then reduce the heat to low and cover the pot with foil and a lid. Simmer for another 30 minutes, until the rice is cooked through and the liquid is absorbed. Enjoy!
